My friend makes breakfast anytime sausages and deerburger homemade. Its a big family tradition that they do. I always donate my deer to them because its easier if someone else has the grinder.

I'm 31 Steve, the meatballs with gravy over potatoes and peas is hands down the way we roll in idaho. Floured deer meet on a bed of creamed corn is something I've yet to see in a restaurant that I guarantee anyone in my town would order just to pass comparative judgement on haha

TIP: If you're using bacon ends/pieces to cut with game meat for mince, try some first...... most will be way to salty for combining with meat. So soak the bacon in super cold water drain and repeat a few times. You get less of the off putting "cured" flavor and far less dry mince too.

If you want to reduce the amount of time needed Ito soak the potatoes add some vinegar preferably white to the water draws starch very well

When I make meatloaf I use the pan as a mold and then put the loose meatloaf on a layer of parchment paper to cook a la Alton Brown. That way the meatloaf doesn't sit in the melted fat.

I read the comments and see others saying to invite this chef or that chef . WHY ? Yes they prolly have a huge following , but how many of those chefs give a shit about farm to table hunting and cooking . I enjoy theses cooking videos with Steve !!!!! He's a good guy and can cook , and his recipes are easy to follow and make . If anything find an up and coming chef that can teach Steve new techniques and ways of cooking the wild game he kills . Shoot, I've got an 18.5 cubic foot upright deep freeze that is packed with ribeyes I cut myself, seafood I bring back every year from the PNW summer house trip. Rabbit, squirrel, and venison. Will be adding black bear this season. It'll be the first time. Hopefully run into ol Mr. Newcomb since we live in the county to his left. But out of everything in my deep freeze, ground venison is the first to go. My wife uses the heck out of it lol.

I use all my grind meat up first. Lol. I cook pasta with it, droewors, cabanossis, burger patties. Frikkedelle. I use sheep tail fat. Best fat for game meat

Cool vid. I watch this and see venison as you do. I try to use it as regular ‘meat’. As I get older I don’t cook/grill/bbq dishes like I used to. But these are great ways to introduce friends and family to wild game. I just wish I cared enough to save all those extra parts you do. 20 years ago, at your age I would have if I lived out here in Idaho at that time. Great stuff! Keep up the great work!

I guess I'm fortunate, but my ground venison is usually the first thing to get used up. Why? I take care while butchering the animals myself to keep dirt, hair, excrement, and/or tainted meat out of the mix. Unless the animal has an unsavory diet, that is what makes the burger taste bad; not the animal's own fat. I don't add any domestic fat to my grind, and yes, I do use the rib meat, sirloin cap, and some other cuts that contain fat. Don't put the crappy taste in there to begin with, and you don't have to disguise it - simple as that. Process it as you would beef, and use it in pretty much anything as you would beef. At least it's worked on the 150 or so whitetails I've tried it on.

Really ... I all ways had the opposite problem I saved the steaks for special occasions and relished the burger til it was gone then had to start cooking the steaks...sometimes even grinding the steak so as to have more burger

Most people who hate the burger, have commercially processed, crappy-tasting burger. The processor doesn't care if a few hairs, some greenish-brown meat, a stray turd or whatever goes into the mix; they aren't eating it. They also stir all the burger scraps together; so you get to share in all the ill-gutted, tainted glory of everyone else's kill.

Wearing gloves while working with ground meat keeps your skin temperature off the meat which makes it easier to work with. Dipping your hand in a small bowl of ice water from time to time works in a similar fashion as wearing gloves.
