Recipe for sausage bruschetta
Serves 4, 5min prep, 15min total
Ingredients:
• 4 pork sausages
• ½ a red onion
• 3 tsp red wine vinegar
• 2 tsp Extra virgin olive oil
• 2 bread rolls
• A handful of cherry tomatoes
• Sriracha sauce (optional)
• Mozzarella cheese
Directions:
• Slice the cherry tomatoes and add salt and petter to them in a bowl.
• Add the diced red onion, red wine vinegar, salt, pepper and olive oil to the bowl, toss and leave for at least 10 minutes, ideally 30min
• Cut the Turkish roll in half and scoop about half the bread from inside it, then fill that cavity with mozzarella and a light sprinkle of salt (optional, add sriracha). Then remove the sausages from their casings, cover your hands with oil and spread the sausage meat thinly and evenly over the top of the cheese and bread.
• Cook the rolls sausage side down on a grill or pan for 10 min on low heat or until the sausage is nicely browned.
• Place the tomato and onion mix on top and season with salt and pepper (add some chopped parsley if you have it).

New favourite way to cook a "snag" on the barbie. My hubby got 3 knives for my birthday. Awesome quality. Might have to get the sharpener too. Buzz patch can help with those pesky flies and mozzie too.
