This recipe yields 16 pcs buns. Pan size is 8.5×8.5 square pan. Bake in a preheated oven at 180°C for 18-20 minutes or until lightly brown. Baking time may vary depending on your oven specifications. I have a conventional oven that heat rises from the bottom.
Here's what you'll need:
1 tbsp sugar 10g
2 tsp active dry yeast 6g
1 cup milk 237ml (please use warm milk, evap, or fresh or UHT milk)
½ cup unsalted butter (110g)
1 large egg
3½ cup all purpose flour (437g)
¼ cup sugar (50g)
1 tsp salt (5g)
2 tbsp oil for bowl
Eggwash
1 egg and 1 tbsp milk
1. In a bowl, mix together 1 tbsp of sugar, yeast and milk. Let it bloom for 10 minutes. Then add melted butter and egg. Mix.
2. Add flour, rest of the sugar and salt. Mix until dough forms. Let it sit for 20 minutes.
3. Transfer to a floured counter. Knead for 10 minutes or until smooth. This would be easy to knead because the gluten is relaxed.
4. Place in an oiled bowl and cover for 1 hour or until doubled in size.
5. Punch the air out. Divide into 16 equal pieces. Roll into a ball. Place in a 9x9 inches square pan lined with parchment paper. Cover and let it rest for 30 minutes (second proofing).
6. Preheat oven at 180C or 350F for at least 15 minutes.
7. Beat 1 egg and 1 tbsp milk for egg wash. Then brush proofed dough balls with egg wash.
8. Bake for 18 to 20 minutes or until light golden.
9. Brush rolls with melted butter for a softer crust.
10. Serve and enjoy!
