This is actually pretty authentic, although real Szechuanese would triple the amount of dried chilis. They would also slowly stirfry the chili a lot longer until they turn darker. Don't worry, these chilis are not supposed to be eaten. They are only there to flavor up the oil and give the chicken a smokey peppery aroma. Good job.

Looks like an attempt to make the SZechuan classic "Gong Bao Ji Ding". In Szechuan they use semi hot "Facing Heaven Chilis", not the super hot ones you put in there. Completely alters the dish. Also Chili Bean Paste (Doubanjiang) and black rice vinegar is missing.

I love making sichuan food, as I grew up with my mom's amazing cooking. If you are allergic, you don't have to put them in, but if you want a crunch somewhere sesame seeds on top can help, but not much. We usually don't put peanuts in. XD

Actually, I would suggest clipping the head and tail of them all and taking out the seeds, as the seeds could turn dark fairly quickly and clipping would allow more flavor to be released into the dish.

I believe he's trying to make 辣子鸡, which is called "Spicy Chicken" in English. Sichuan is the way to spell 四川 in Chinese, but Szechuan might also be fine.

Tried it at a restaurant or my grandma cooked it before. Meh. A tiny bit spicy, but very tolerable spice. Oh well, probably I have been eating spicy food my whole life or because I inherited my mom's ability to eat very spicy food or the fact about Singaporeans being able to eat very spicy food is true.
