To a lot of us the chili sauce is also very important with the chicken rice (1 plate is never enough and I see you guys didn't comment or eat with it )!😅For Boon Tong Kee chicken rice, I have eaten them from a kid till now. They have other side dishes also very good. Each vendor has their own secret recipe and method of cause in cooking their chicken rice. I know some will mix their rice to get the different texture and chew. P.S. some will add a bit of butter too. FYI there is no lemongrass and blue ginger in the making of chicken rice. These two added will give a very different taste and aroma to the rice. They are usually added in the making of curry paste haha. At least they are not used in the Singapore and Malaysian chinese style chicken rice ya :D Bigger chain stalls will have central kitchens prepping the chicken etc then sending to the stalls so as to control the quality. If it's individual stalls, they would all do the cooking and prepping in the stalls. They use fresh chicken imported from Malaysia. (Discounting the episode whereby Malaysia government stopped the export of fresh chicken to SG). Actually I feel that the char siew and noodles from the Hawker Chan is much better than the soya chicken + rice! Since you have queued for 40 mins you should have ordered the char siew noodles as well!

@@stevenson6974 . Yes , Katong East Coast Road - 5 x Stars Vege-Garden Chicken rice is better than Boon Dong Kee ( just a few shops number# away). Bus Stop 92121. Ate 5xStars chicken rice, opposite building to take "Jin Yu Man Tang Dessert Shop - Smooth Hong Kong Style Milk Puddings And Mango Pomelo Sago, Found At East Coast Road".

A very good series. Look forward to next episode. Thanks ar chun.
Hawker Chan is definitely not Hainanese chicken rice. The fact that he is spelling his name as Chan (Cantonese pronunciation of 陳) means this is Cantonese style chicken rice (油雞飯). So is Boon Tong Kee, below is abstract from their website: "In 1979, Mr Thian Boon Hua started a small stall in Chinatown serving Cantonese chicken rice..." I see everyone here praising how "accurate" this gentleman presents his "history of Hainanese chicken rice". Well I beg to differ, I'm Singaporean Hainanese and frankly, I wasn't surprised he would get it wrong. Even locals have a lot of misconceptions. Anyway, thanks for the hard work introducing our Heritage! 🙏 So, he covered 4 places, 2 are Hainanese, 2 are Cantonese. 50% right... As for Chatterbox and Tian Tian, they are known among my Hainanese circles as "For Tourist" kinds of Hainanese chicken rice. Those really good ones are way under the radar and usually operated by husband and wife (plus the occasional filial children) in heartland hawker centres and coffeeshops, far away from the reaches of tourists...

@@starfoodI learnt that the first ever chicken rice in Singapore was 瑞记。Unfortunately the owner has pulled out from Singapore and back to Malaysia many years back. Now 瑞记 is still running the business in Senai, somewhere along the road to Senai Airport .

@@kenmalaysia7440 The owner closed down his shop. The people running the Chicken Rice shop in Johor Bahru Malaysia are his ex-employees. The shop is near the Senai airport.
@@weijyeng4539 Well said. He is not a genuine Malaysian Chinese, we don't literally translate half-boiled eggs as 半熟蛋 but 生熟蛋. We're 馬來西亞唐人, not 馬拉人.

Tian Tian Hainanese Chicken Rice - Bedok Branch (Simpang Bedok) should be the best. Bus stop (85089 or 85081) above all stalls here.
