Looks wonderful … thank you .. I was taught to fry the raw rice a little with the garlic ginger and then add chicken broth .. Will try your method .. seems far more efficient ❤

Usually, Malaysian Hainanese chicken rice don't use lemongrass, or pandan leaves. Saute minced garlic & ginger with chicken fats oil & rice. Then adding salt, and chicken broth to boil the rice. Of course, everyone can do it a little differently according to his palate. Chicken either steam or boiled but steam will retain the flavour more than boiling. In the restaurant chicken are usually boiled but when I prefer to steam it to retain the flavour.

Yes, effort goes in the preparation of the rice. garlic, lemon grass and onion. Learn no need to stir fry lemon grass but direct into rice. Ricky point is quality rice cook with effort skim off the chicken skin with its oil produced will be superb taste to the rice, however sinful it may be. Never mind, once a while, let go and enjoy!. Thanks for the effort goes in produce a superb pot of chicken rice, even marinate the chicken overnight to let salt penetrate to its meat. Ricky is indeed a cook of different class. Efficient and achieve the desired result !

I think Chef wish to have his favourite rice grain cook only with chicken stock first, then coat it with fragrant oil. It will be soft , fluffy and evenly coated with oil.
