MUMBAI STYLE PAV BHAJI RECIPE
INGREDIENTS FOR BOILING:
• 500 gm Potato (cut into halves)
• 250 gm Tomato (cut into halves)
• 250 gm Cauliflower (chopped)
• Salt, to taste
• 1 tsp Kashmiri red chilli powder
• Water, as required
FOR RED CHILLI & GARLIC PASTE:
• 7 to 8 Kashmiri red chillies (soaked)
• 1/4 cup Garlic
• 1 tsp Salt
• 1/2 cup Water
FOR PAV BHAJI:
• 4 tbsp Oil
• 1 tbsp green chilli paste
• 1 tbsp Ginger paste
• 1 cup Onion (chopped)
• 1 cup Tomato (chopped)
• Salt, to taste
• 1 cup green peas
• 1/2 cup Water
• 3 tbsp Chilli garlic paste (from above)
• 1 tsp Coriander powder
• 1 tsp Cumin powder
• 1/2 tsp Turmeric powder
• 1 tsp Pav bhaji masala
• 1/2 cup Water
• Boiled and mashed vegetables (from boiling ingredients)
FOR TADKA:
• 2 to 3 cubes Butter
• 1/2 cup Capsicum (chopped)
• 1 tsp Garlic chilli paste
• Salt, to taste
• Fresh coriander for garnishing
METHOD:
FOR BOILING:
1. Place potatoes, tomatoes, and cauliflower in a pressure cooker.
2. Add salt and Kashmiri red chilli powder.
3. Add enough water to cover the vegetables. Mix well.
FOR RED CHILLI & GARLIC PASTE:
1. In a blender jar, combine soaked red chillies, garlic, salt, and water.
2. Grind into a smooth paste and transfer to a bowl.
FOR PAV BHAJI:
1. Heat oil on a large flat pan (tawa).
2. Add green chilli paste and ginger paste, sauté until the raw smell disappears.
3. Add chopped onions and tomatoes. Mix well and cook until softened.
4. Season with salt and add green peas. Mix thoroughly.
5. Pour in 1/2 cup water to adjust consistency.
6. Add the chilli garlic paste prepared earlier.
7. Sprinkle coriander powder, cumin powder, turmeric powder, and pav bhaji masala. Mix well and mash the mixture slightly.
8. Add the boiled and mashed vegetables. Mix thoroughly and let it cook well.
9. Push the cooked bhaji to the side of the tawa.
10. In the centre of the tawa, add a little more oil and butter.
11. Add chopped capsicum and garlic chilli paste. Sauté briefly.
12. Mix the sautéed capsicum and garlic chilli mixture with the bhaji on the side of the tawa.
13. Cook everything together for a few more minutes to blend the Flavors.
14. Garnish with fresh coriander leaves before serving.
