I happened to stumble across one of your videos roughly a month ago, being a food enthusiast much like yourself and couldn't help but subscribe. Your approach and take on your journeys in search of the yummiest foods are fantastic. It's not very often where you see food commentary without some aspect of negativism but seeing someone portray their love for trying new foods with such enthusiasm is great. Lol!! Loved your vietnam videos mark! I was born in vietnam in 1968 and came to us in 75 my mom is vietnamese chinese and my father was in the war so i didn't know him. But your videos make my mouth water! I grew up eating everything vietnamese!! Thank you for bringing vietnam back to me.

Im a vietnamese living in germany, and I love good food too! And Im so happy to see you enjoy vietnamese food that much, im getting hungry EVERYTIME! I wish I could do the same thing u just do.. travel and eat delicious dishes from different countries. I feel sad for a lot of people and friends in germany that arent that open minded to try new stuff because it doesnt look like the food they used to. Ill recommend ur videos in that cases. It looks really wonderful Mark. I normally don't like cat fish because of the earthy and very fish flavor but how different is it from ;like a channel cat fish???? I would truly like to try it. The pork with mustard greens looks great as well. Your can never go wrong with grilled pork. Your did a wonderful job Mark as always, truly like how you explain the flavors and textures. Look forward to your next Video. Regards to your wife. god bless as always mark. Oh tried the shrimp paste, did it as you said in your last video. My grandmother while living in Vietnam was very poor and would make this often to her kids. She still makes this dish to this day...she makes it so much that I like to think of it as her guilty pleasure or something XD

The soup is called canh cua mung toi rau day, the sliminess is from the veggies, rau day and mung toi (idk the english name lol) and the green part is a family of quash. The meat is actually ground whole mini crab!!

Mark Wiens it's actually jute leaves cooked with sponge gourd and crab. This was originated from the North, but now you can find it anywhere. Jute leaves have that slimy texture you can find in soup.

Oh Mark!!! Where are you now? You haven't left Vietnam yet? So great to see you enjoying one of our typical meals again. And if you're still there, I suggest you to try "bánh mì kem" which means "bread with ice cream inside". To describe precisely, it's not a regular type of bread, it's smaller and very soft, so they put 2-3 fresh balls of ice cream in it, and add in some peanuts (small size) and some cool strawbery syrup to make it more flavorful. But the hard part is that you won't be able to know exactly where they are because the sellers constantly move one place to another on the street carrying with them a mobile small car, so there's no fixed place (but in my experience, they often show up near the park). Anyway, the best thing you can do is to show the locals these following words and they might help you out: Bánh mì kem = kem ở trong bánh mì + đậu phộng + si rô dâu Hopefully you will have chance to try it :)

The spinach like soup is probably Malabar spinach or in Vietnamese it's called rau mồng tơi.
