My older friend & I would seek out Caesar salad over very many years. If there aren’t actual anchovies it it, we’d pass. Once we were at a boulangerie and they brought us a small plate of extra fishies! We remember it with fondness to this day (me 70, him soon 90).

Dinner salads are popular in the US. We even have salad bar restaurants that only sell....salad. Oh, they have protein and some kind of grain in them too. But you can always opt to have only green leafy vegetables. Anyhow, try a Cobb Salad. It has bacon, chicken, boiled eggs, salad greens, cheese, tomato and avocado. The other one is a Waldorf Salad (Basil Fawlty aside). The original one was equal parts chopped apple, chopped celery and chopped nuts. The dressing was mayonnaise. During the 20th century, they began adding grapes, orange, and chicken.

You absolutely are trying to make an emulsion with a Caesar dressing
