I just made it and it's perfect. I used half of the optional cayenne at the end. So scared making such a huge amount and trusting your recipe but was thrilled with the results! Will be checking out your other recipes! Got yourself a new sub!

It depends on how big you make the plates but this recipe as written will feed 8-10 people (with rice)

Just made it!! Wow wow wow! It’s awesome! Made it a little different. Doubled the chicken and didn’t have the sausage. We love it!! Too bad I can’t post a picture of it on here! We are going to freeze a lot of this! I also doubled the batch! Thank you for sharing!

This mama right here has Cajun Blood that goes back all the way to Nova Scotia and France and that sir is not Cajun the second you put tomatoes. And never have I ever seen or heard of this dish not even in New Orleans. Maybe that’s some north Louisiana stuff but you will not see anyone under I10 making that dish🤦🏽♀️

LOL. I certainly don't want to diminish your heritage but if you've never heard of etouffee I have serious doubts you've ever eaten Cajun food. Etoufee has been around for over 100 years and while the creole version is much richer the cajun version is just as good IMO. Usually, shellfish is added like shrimp or crawfish and is served in most Cajun restaurants. One of my favorite ways to enjoy this awesome Cajun food is in a fried pistolette. Funny enough the local gas station outside of Jennings, LA made some of the best I've ever eaten. With that being said, Iota, Eunice, Breaux Bridge, Lake Charles (can anyone say steamboat bills!!!), Lafayette, and I can go on and on. As far as New Orleans goes, WOW - The Gumbo Shop, Mothers, The Royal House, Creole House, Felix's, Old NOLA, and that's just a few. Not sure where you live but trust me when I tell you this Cajun dish is amazing!! You should try it. You can thank me later😉

@@EasyFreezerMeals the second you put tomatoes it’s Creole love not Cajun. And no real Cajun or Creole is using Worcestershire in any authentic étouffée. No thank you I will pass on fermented anchovies😕in my Chicken and sausage fricassee. Lafayette cooking is not the same as NOLA. Just like Lake Charles is not like Lafayette cooking. When you go east you got okra and tomatoes in damn near everything and when you are north of I10 you got bland ass food. I’m near the gulf, if I would used your recipe at a cookout they would make me bring napkins the next time I was invited to a cookout. Sheeeeeee that’s if they invite. Happy cooking but that’s not Cajun 🤓
