Cajun Shrimp and Crab Seafood Boil On The LoCo 60qt Cooker

Taking a step back from the pit and firing up the burner. On Today’s episode we’re going to do a deliciously simple seafood boil!
Step 1. Seasoning The Water: First thing you want to do is bring the pot to a boil. Then dial in the flavor you’d like in the seafood and that starts with seasoning the water. I’m using 2 whole oranges, 3 lemons, 2 onions, a boil bag, 2 concentrated liquids, 10 bay leaves, 4oz of minced garlic, 8oz of butter, 2 cups of salt and one pound of boil seasoning. I think that's it. Once it’s all mixed in give it about 15 minutes to work itself into the water, this is important.
Step 2. Add To it: After 15 minutes all of your seasoning should be dissolved into the water, leaving nothing but flavor. Now you can start adding what you’d like to the pot. This part is all about timing, if you’re using different ingredients you’ll want to work that out beforehand. I start with potatoes, I give them a 10 minute head start. Then I'll toss in my sausage and crab legs, and I shoot for 5 minutes per pound of crab legs. After the crab legs have had time to cook I'll toss in some veggies. Today I'm using green beans, I'll give them 5 minutes and then I add the shrimp.
Step 3. Stop!!!: After I add my shrimp I'll let it boil for 2 more minutes, then I cut the fuel and drop the temp of the water below 150 to stop the cooking process. I’m using ice to do that but they make specific products for this as well. It’s a very important step. Once the pot has stopped cooking you want to allow the seafood to soak in all that flavor. I go about 25 minutes but you can adjust that time based on the flavor you’d like. The longer the soak the spicier the boil.
Step 4. Finished: Once you allow it to soak your desired amount of time you’re ready to eat. Go ahead and plate it up or poor it out on the table, grab a bib and some tools, this gets messy!

I'll let you go on the frozen crab, but, if you live in the south frozen shrimp is unacceptable! Here in Georgetown SC it's fresh brown or pink, or no boil! Blue crab and crawfish also!

We do something similar in SC, but we use Old Bay with corn and blue crab instead of beans and snowcrab; we've got tons of both. Plus some Better than Bullion lobster base.👍

I like your tip about the minced garlic instead of the cloves. Brilliant. I always add fairly large whole mushrooms because they soak up the flavor from the boil like crazy. Flavor bombs. And fresh corn on the cob cut in half is a crowd favorite at my boils.

Doing my First boil in 2 days got a question. How much water do I start with in my 60 quart pot for 15 lbs crawfish, 5 lbs shrimp, 5 pounds Crab legs, 4 pounds mussles, 2-3 lbs sausage?+corn, taters, mushrooms? I'm thinking about 8 quarts? Please advise.

Am I missing something? Wouldn't it taste better with the seasoned juice in it? It seems like a waste but I've never made it yet, ordered a nice deep fryer to try sometime in the near future. That looks amazing by the waym

You'll be very surprised when you realize just how much flavor/juice this soaks up on its own. The soak time is dependent on spice level, the longer you let it soak the spicier. After years of doing it we've kind of found our sweet spot. Good luck on yours!!

Wonderful recipe! Do be cautious the zatarains boil is extremely spicy. It was tolerable for me, but not good for the other spice sensitive people in my group.

Butter helps the meat to separate from the shell similar to vinegar. It also gives a nice flavor.
