Pork chops are probably my favorite food. Blackened, smothered, baked, grilled, you name it. Food of the gods, man. I love how you didn't even bother with a fork and knife. I never do! It's the best way to eat a chop :)

I couldn't find the exact spice blends you mentioned as your first choices, and ended up with Tony Chachere's Original Creole Seasoning and Cajun's Choice Blackened Seasoning. And fresh thyme from the garden. OMG, the smoke! I ran the exhaust fan, and had the front and back doors open with a breeze blowing through. Next time I think maybe I'll try taking the skillet outside over coals. Thank you for all you do
