Super Easy Cake Mix Recipe
This cake is simple to make and is so delicious! It doesn’t dry out and is great for covering in buttercream or fondant.
For this recipe, you can get rid of the cake mix box with instructions! Use these ingredients and instructions instead.
Ingredients:
1 box white cake mix (Betty Crocker or Duncan Hines)
1 cup all-purpose flour
1 cup granulated sugar
1/2 tsp salt
1 1/3 cup milk (or water)
1/4 cup melted unsalted butter
1 tsp vanilla extract
1 tsp almond extract
1 cup sour cream (room temp)
3 large eggs (room temp)
Directions:
1. Preheat oven to 325 degrees F and prepare pans by lining with parchment paper and spraying the sides with baking spray with flour.
2. Using a handheld or stand mixer fitted with the paddle attachment, mix together the cake mix, flour, sugar and salt.
3. Add the wet ingredients and mix on medium speed until fully combined.
4. Pour into the pans and bake for around 50 minutes.
5. Remove from the oven when a toothpick inserted into the middle comes out clean.
5. Allow the cakes to cool completely on a wire rack. Optional - wrap in plastic wrap and freeze.

Mascarpone Whipped Cream
8 oz mascarpone (1 cup)
1 cup chilled heavy cream
¼ cup granulated sugar
1 tsp vanilla extract
Beat mascarpone, heavy cream and sugar with a handheld or stand mixer fitted with the whisk attachment until the mixture begins to thicken. Add the vanilla extract. Continue beating until the mixture holds a stiff peak.
