Hi Dale; Have not forgot about you but have been in and out of hospital Aug & Sept due to the old ticker saying I'm about done. I'm fighting the best I can and back home.I do not have a laptop so I coulg not tke you with me, maybe somday I will be able to aford a good used one. Just letting you know why I have not left any comments..

What an interesting and informative video! Your cheese looks delicious! I confess, I’ve been avoiding your cheese videos because I’m afraid I’ll get excited & start another project! I make yogurt nearly every week, and strain out about 50% whey. I freeze the whey & use it in bread. I saw a video a long time ago for making ricotta from the whey. Have you ever made ricotta from whey? I believe that is the original way of making ricotta.

Yes I tried it a few years ago you need a lot of whey to get very much ricotta.

I've never tried a smaller batch but using this method they will store well in the fridges for a few months.

I was just looking at camembert recipes last night!! 😜 while my castle blues were being flipped!! Think I'll wait on my MD 88 culture to come. Maybe make something else.. enjoy watching your videos!! What recipe are you using?? Most recipes don't say which cultures to use and I find your videos helpful in that aspect!
