Man this is a great idea. I make oxtails once per year for my late father's birthday. And every year it hurts cuz I can hear his voice saying "that dont' make no sense how expensive them oxtails are lol". I'm gonna try these shanks!

Looks so delicious. I love oxtails. I’m 76 and remember buying them when they were just a few dollars for a huge pack. Well, those were the good old days. Those cooking networks sure killed the low prices when they took all the cheap cuts and turned them into gourmet meals. So sad! I’m going to make your recipe for sure. Greetings my dear, Your grandfather is right because back 200 years ago oxtails was what the slave master gave the slaves to eat black people have been eating it for years even at one point of time in a meat market they will give it our free because it was considered waste. I have some age on me and I remember my grandmother sent me into The meat market and the man will give it to us free because they consider it as waste big shanks is the legs of the cow 🐮 any steel beef. But when a certain nationality realize that Africans and African Americans eat them on a daily basis they begin putting them into fine dining and charging a large price for them shooting the market value up on them. Beef shanks are delicious I have been eating them for years. It started out being wasted and given to the slaves,, then it became free at meat markets,, then they start charging inexpensive prices because it was waste, then the price went up due to the volume of people purchasing it. Just enjoy the beef shanks while they're inexpensive because the market is going to get in wind of people eating beef shanks and prices will be driven up on them. In the event God forbid it happened just purchased you an inexpensive pot roast cut it up in pieces and put your vegetables in it and make a stew😊✌🏽😍🙏🏽

I came across these in an international store and decided to give these a try. I put them in my crockpot with my seasonings and babbbyyy!!! These hit the spot with some white rice and steamed vegetables. Give these a try. If you cook them right, you will be delighted in the taste and the meatiness of these shanks. And the cost is wonderfully cheaper than Oxtails.

In Pilipino cuisine , oxtails are a must have cut in a special dish , our version of " curry " using peanut sauce. We supplement that lack of meat by using beef shank , tendons and beef trotters for its collagen , plus tripe . So thank you for showcasing beef shank.

Isn't crazy what happened with ox tails? Ten years ago it was just a "butchers cut", saved for the butcher, as people didn't want it. It was the scraps people thought were horrible. Next thing we know the people on the cooking channel started using it and then boom... and I do mean BOOM! As it went from $2 a pound to $12 a pound! It's just not worth it anymore. I love how you did such a classic simple beef shanks braise. I'll admit I do like the pressure cooker method these days, but I still sometimes go old school and throw the whole thing into the over too. Either way, it always makes for an incredible dinner.

We can't have nothing. THEY took kale that I hated as a child & made it into a salad cause THEY couldn't wait & couldn't get the flavor we did & the price went UP!!! Chicken wings are on the stock market now & even sent a woman to jail for 9 yrs. Now if you want Oxtails you have to find some that "fell off the back of a truck" or take out a loan.

The other reason why oxtails went up in price was all that talk about eating collagen to improve skin and delay wrinkles. I don't know if that is true or not, but all that talk drove up the price of oxtails.

I started using beef shanks years ago. Growing up my grandfather had a cafe in Albuquerque, NM called Fin & Feather. One of his highlight meals was oxtails. Oxtails was a "cheap" meat at that time and was what he made money from. We grew up having oxtail stew on the regular.When oxtails started being featured on the food channels and started going up in price I started thinking of alternatives. Beef shanks.....so good and you will find the best prices and always on sale at your local mexican market. Also after braising put in crockpot on low for 6 hours....Super tender.

They always mention some "fancy to them" way they had it at a restaurant or some viral video. However, of course everyone is to blame though not just one demographic. The demand is up across the board. When I saw it being the meat of choice for pizza toppings a while back, I knew things had gotten out of hand. 😫🤣😤🤣

We call this beef shin in the UK and it's the best meat for stews PERIOD. If you know anyone who hunts, venison shank is also delicious and not as prone to drying out as most venison cuts. Love your channel and would love to see more Caribbean/fusion dishes especially some of the Indian-influenced dishes like Trini pelau.

I agree with you on the price of wings. They are regularly $3-3.50/lb near me. When I find them on sale, (usually at Aldi), I buy 5-10lb and portion them and freeze them. I bake them twice. Once with a light flour coating with salt, pepper, onion powder, garlic powder, smoked paprika , and after cooling well, once again after dunking them in around 70% hot sauce, 30% melted butter. They come out still moist but with crispy skin. Remember to turn them a couple times. My "oven" of choice these days is a Cosori, multi-function, counter top oven.

One of the ladies at work told me that she remember they used to get oxtails like 10 cents a pound but now that it’s all the rave it has gotten so expensive she said she remember days when people did really eat oxtails except if you were poor. Mom used used beef shanks all the time. I use mine in my vegetable beef soup, and as the meat for my Hungarian goulash. I let it braise for a while to get them tender then take the meat off the bone and and cut it up for my Goulash. Serve over mashed potatoes and the thickened gravy.

I just watched your video for the first time and subscribed. I watched your video for beef shanks and I have to agree that while I love oxtails I'm not going to pay that price. I haven't bought them in almost 2 years because of it. Last week I was in the supermarket and saw beef shanks. I've never made them before, but they looked so good. I bought two small ones. I put them in my crockpot and cooked them on high for four hours along with carrots, potatoes, and onions. Made a delicious gravy and I was amazed at how good this beef was. it was melt in your mouth tender, and a flavor was outstanding. I always caramelize my meat first and it's amazing how good the gravy was with these beef shanks. I love the hunk of marrow also. A couple of days ago my supermarket had beef shanks on sale for 3.99 a pound. I bought four of them -lots of meat around the bone. I don't know how or why I passed this up for so long because I was paying $7.99 for Chuck roast to cut into beef stew and also for pot roast. No more. Looking forward to more of your videos.

Osso Bucco is a dish I make that I found online from an Italian Cooking chef. Osso Bucco means HOLE IN BONE. The Hard Rock Casino had a new Italian Restaurant and offered it on the menu. It was priced at $39.00. I made mine the way the Italian Chef showed me and it was as tender as could be. Served with a mushroom risotto and brussel sprouts. It was delish. Oxtail went sky high. I like that too but too expensive at this time.

I’m in the middle of your tutorial, and I LOVE IT!! My advice, don’t say ‘blood’. The red liquid is not blood. It’s just enzymes breaking down and will turn brown when exposed to oxygen. It is still safe to consume. Just cook it low and slow for pot roast. You can even brine and slow cook all at once.

Yes, beef neck bones are off the chain, too. I cooked some & my sister asked me what they were. I boiled the pot of neck bones for 30 mins., took them out of the pot, put them in a pan with bar-b-q sauce for a little over an hr. and Lord,Jesus. 😊

I tried riding the oxtail craze but mines didn't turn out that good. I didn't have any experience in making oxtails and that science project just rendered greasy meat. Hence, I walked away from that experience thinking Oxtails are highly overrated and something I don't necessarily have to have in my life. I will try your recipe cuz when I spend my limited income on meats, I'd like more options. I never knew about purple cauliflower and it will be on the look-up list. Your presentation looks fabulous, tasty and great for comfort food season. Thank you and perhaps I'll visit this for the holidays. I'm tired of turkey. :)

I do the same and often use my stove top pressure cooker. I will add the peppers! Habanero, madame Janet, ghost or scotch bonnet. I like mine with rice and some times I will add the beans. I like the gravy. My kids like potato with it. They be knocked out! Got to have the wine! The alcohol will be cooked out but it adds nice flavor. For those who still don't like it aged balsamic vinegar is a good substitute. Peas and carrots or string beans are a good veggie to accompany.

@@ndn1958thank you! I keep seeing people blame certain cultures for rise in prices. The average person doesn't control distribution and vast farms of animals. If prices change, it's because the corporations and suppliers of all these meats decided to suddenly raise prices, not coincidentally after some celebrity starts using certain cuts!

I cook mine in the oven for like 4r hours with lots of veg like you its a nice easy cook. This meat is so good to freeze also.

Great!! I got so hungry watching this! I love that you are not afraid to use store-bought mixes instead of creating them all yourself. I am a cook and until a few years ago I made all these mixes - roasted, smoked, mixed, even raised the herbs and spices. In the real world no one cares that it's a homemade spice. Great idea for the shank. I'm a huge fan of oxtail but the amount of meat is skimpy. Thanks a lot. (My wife said, "I wish you wouldn't watch that before preparing dinner because we have all these leftovers in the fridge." lol)

@@YeshuaKingMessiah If you're a foodie (like me) and have $250/person meals then yeah, I can detect a difference. But 95% of folks can't (or don't care). I fixed Pastichio last night and used what I had on hand for the Bechamel - fat free half and half. It was wonderful. I use quality store products only in recipes with several ingredients.

Beef shanks , my mother used them all the time when she made Caldo de res ( beef and veggies stew) good and very flavorful cut of meat.

I never thought about using beef shanks to replace oxtails for this type of recipe. I usually use beef shanks for making a orso bucco recipe. Now I'm going to have to try this recipe because I love me some beef shanks.

Beef shanks or “Osso Bucco” have been a staple in my family for generations. Especially on the holidays. Caribbean flavor profile, mushroom gravy, tomato/onion/bell pepper sauce, many different preparations.

First saw beef shanks in an Asian grocery store and was surprised at how cheap they were. Being on the bone, had to give them a try. We used a slow cooker for them, seasoning them well and using a beef bouillon cube. Came out great! And the marrow was an added bonus! put in on a small piece of toast like butter.

We call this shin and it’s one of my fave cuts of beef! The stew is amazing especially braised and you add veggies to it.

I make mine in a slow cooker in beef stock onions, garlic, and Mexican seasoning. I put it for about 6-8 hours on slow. Once it's done, I make shredded tacos with some green salsa. No leftovers

Beef shanks are terrific for French Onion Soup as well. I roast the marrow bones with some soup bones and then make bone broth as the soup base. I caramelize lots of yellow onions in butter. Make the soup with the shank meat and broth. After the meat is falling apart I add the onions to the soup and adjust the taste with better than bullion beef base salt and pepper. Serve it hot with toasted bread covered with cheese melted under the broiler.

I prefer this over trying to pass turkey necks off for oxtails. I use beef shanks for Osso Bucco instead of using veal shanks but I have not cooked them this way. Thanks for sharing a very nice recipe!

I agree oxtails are too expensive today! Back in the day my mom made them for our family of 7 and they were very affordable for us simple folk! Certain folks discovered them and the prices went up! 🙄 I recently used beef neck bones as a “substitute “ and made a stew in the crockpot with veggies. My 28 year old son told me they tasted good like oxtails. 😅 I always brown the meat first before putting in the crockpot. The crockpot is easy because you set it and forget it! I will try the beef shank next time for to make for my family. Looks yummy and Fall is the best time to make delicious one pot meals! Thanks for sharing! 😃🙌🏾❤️
