I made a breakfast casserole for my office Christmas brunch & it was a hit!!. Eggs, green & red peppers, sage sausage, spinach, mushrooms, andouille sausage, sour cream, milk & cheese, garlic & onion powder, pepper, Cajun seasoning, chives, green onions & hash browns. This whole meal looks delicious! Christmas is over for the year, but simple changes will make it perfect for Easter, Mother's Day, or a surprise birthday brunch! I think your banana bread looks even nicer than my Grandma's. If I do this for Easter, I may sub in chocolate chips for the cranberries or make lemon poppyseed loaf. This is such a good adaptable way to entertain!

What time should I show up for breakfast? He he seriously looks great. I am definitely making your sausage breakfast to go with pancakes. Any suggestions if I grated potatoes (I have alot of fresh to use up) or would that not work as well? You cracked me up about the bread. Once I made a pound cake and a piece stuck. I called mom (Alabama) all upset and she calmly said fit the piece on, glaze the cake, and turn it around with the knife near the good side. It worked!! TIA

@CamirrasKitchen Merry Christmas. I wanted to let you know OUR lol sausage hashbrown casserole was the star of the table. I used 6 eggs only because I was not going to put that last egg back in the fridge all by itself. I used a hot sausage (my cousin complained AFTER eating 3 helpings) next time I will use 1/2 sage. It worked out great. Thank you!!

i just store it in a container by the stove,. if i get alot i will put it in a mason jar and leave it on the counter. make sure the meat bits are strained if you want to keep it there a long time or put in the fridge
