Caribbean people clean their meat too and we use lemon or lime to cut the "freshness". But we season our meats overnight in herbs (chive, garlic ,onion,thyme etc) and then scrape the herbs off before caramelizing the meat in brown sugar. Ketchup in stew is our norm. Have a clear sink and counter-top before you begin cleaning the meat/poultry and then thoroughly clean and sanitize the area when you are finished.

Please to specific which island Jamaican do not use chive, brown sugar is a new thing. Ketchup also new. Clean is to cut rawness not freshness, different island definitely not 🇯🇲🇯🇲🇯🇲🇯🇲🇯🇲. Bless

@@lizabetx483 in Jamaica we say to cut the rawness. Think of how fish has a fishy smell and using lime cuts that smell. It's the same thing with meat. You say sumn different in trinidad and we say differently in JA.

So apparently in the culinary world they don't think it makes a difference whether or not you clean the meat the germs get killing during the cooking process. I don't care what no body says I rinse the meat before I cook.

A little bit of flour on the meat before you rinse will help grab hold of the nasties.

There's no need to clean meat. It's just an old wives thing. Especially if your braising meat or cooking in a pressure cooker. And this is coming from a professional chef. And plus it's not blood, it's myoglobin.

Soul food dinners used 2 cost $5.00. GAS USED 2 B $.15 a gal. Candy and soda was $.10, Rent was $100. Per mo. I know I'm old, but retired, I am content and happy.

Girll completely agree. We in the Caribbean clean our meat. The places these meat be and how they be cut and prepared we don’t know. It could have been dropped, sneeze on etc. clean with water and salt, vinegar or lime. Just clean out your sink with bleach and dish liquid and you good. Doing the “cleaning” also help draw out blood. We been doing it for years.

I learned something today using beef neck bone instead of oxtail. It cost me 32.00$ cdn for two packs of oxtail with only four pieces of meat inside each pack. xoxo

My mom used to put beef neckbones in her pasta sauce. It would cook all day! And then we would munch on the bones! Love it and definitely gonna try this. I wish I could try the shrimp but I’ve developed an allergy unfortunately. Which stinks because I love shrimp!

Made the oxtail style beef neck bones on Sunday, it was a very successful venture! I've never made oxtail before and the price was a deterrent too but these were relatively cheap and also delicious

My soul is snatched ❤️😍 you did that. Btw I'm glad that you do clean the meat. I use water and vinegar or water an citrus fruits to get all of the gunk out. The ONLY meat you can't wash is ground meat. Everything else must be washed.

Great job! You got a lot of information and recipes in a short video! I love this mix that you put together. Awesome job on re-creating oxtails with the neck bones. I’ve done that a couple of times. I like your recipe here. I didn’t know all that about the sweet potato having all that moisture. I’m going to try your way next time! Vinegar does actually help, it makes the meat more tender but only if you marinate it a bit and even mix it with some flavor. Great Dish!

I think once you open that meat packet and see the blood and excess meat particles you know automatically to Wash the meat! I agree with you sis.....it's just sanitary! And by the way your meal looks Delish!!😋

Growing up “poor” in San Francisco my mama made magic out of neck bones often. You brought back so many memories ain’t nothing like braised neck bones with some yellow mustard imma try to tho to make neckbones into oxtails because one pack of oxtails in oakland CA 94606 is $85.00
