I used to run a concession stand at a small ball park for our Daughters softball league. I bought the 36" and man, I worked the crap outta it. I used to short order part time nights at a local IHOP. Learned a lot calling the wheel and standing at the flat top. Really enjoyed doing it. Hamburgers and hotdogs, grilled buns, onions and peppers can't be beat using the flat top. I've even done Cuban sandwiches with it (they were a big hit and always sold out). When my Daughter aged out I left with her, donating it to the league. I just recently had the opportunity to pick up another flat top though its not the 36" Blackstone. A 30" catering flat top. I think I'm going to give that a workout at fish camp this year. One of the things I have been disappointed that I never did was work as a short order cook in a diner. I’ve worked a lot of jobs to learn the skills but that is one I didn’t do. As I’ve gotten older, I’ve done a lot of cooking and even some catering but I realize my areas that could be improved. Scott Dancy I’m jealous of you :)

I never knew what basted egg was until now. I’m just leaving in flat top. Awesome video. Now I will try all of them. My eggs were not that clean I cooked after the bacon. I see that a clean grill is the key to perfect eggs. To not use the bacon grease. Thanks for taking the time to do the video. 😀

I would suggest that you can incorporate a small amount of bacon grease into any oil that you may use on your griddle. Enough for the flavor, but bacon grease generally has a lower smoke/fizzle point than a flavor neutral oil like avocado oil. Bacon grease will actually scald and burn as it smokes/fizzles, and that is what is causing issues with burnt/dirty eggs. (TIPs: 1. Bacon grease however, is great to season your griddle, but you don't want the griddle to be more than 350 degrees. 2. Don't use an oil like Olive oil or Avocado oil for seasoning. These non-Veg/Non-animal fat based seasons will make the surface sticky and will flake off. The best seasoning that I have used was beef tallow, or even regular lard or veggie shortening).

Does everyone know that food releases on its own once its ready to flip? I know its hard to film and cook but once I turned the temp down on my black top my food became “wow!”. The sausage was cooked too hot too. I also recently learned that bacon should be placed on the grill before it is warmed up. Cold bacon on a cold grill renders crisp yummy bacon. Happy black topping!

Try to get your grill 350 at the "meat" end. 250 at the "egg" end. You could also do pancakes and french toast on the same grill. Hash brown's and home fries. Overheard, break your yolk to begin with. Up's just try to get the white's to fan. Scramble you dont need so much oil. They are more fluffy if you use less. Get you some grill weights... a "egg" spat. An also a paint scrapper... :)

Husband and I have been comparing the Blackstone and Campchef. I LOVE the flat top, but also want to use the grill option. So fat Campchef is the winner. Now to get the money for the one I like and the stuff to go with it.

I have an early model Blackstone Griddle. It has the front grease channel that drains to the side. There is a small hole for the grease to drain but it always runs under and never falls into the tray. I’ve been trying different hacks but I like the round lug/drain spout you’ve got under yours! Also, I’ve converted mine to natural gas. Never have to worry about running low and wasting fuel cleaning etc. Experienced chefs out there can pick you apart. But us weekend cooks like to have fun. It gets a bit stressful trying to time everything when you’re cooking multiple things. Like making burgers with bacon, and an egg. Toasting the buns etc. then when you break a yoke ☹️ I feel your pain.

With the Blackstone i use a metal tent stake through the hole into the collection tray. The bacon grease is usually pretty cooperative about following it.

No, you don't have to have all the burners on and I agree the extra space is great. Camp Chef does offer several sizes and options. I just picked up the VERSATOP 2X GRILL 16" and the DELUXE STAINLESS BBQ GRILL BOX 90 ACCESSORY we already have the ARTISAN OUTDOOR OVEN 90 ACCESSORY all work great and is our new camping set up. The Pro 90X was a little overkill for us camping. Thanks for asking and watching

Enjoyed the video and you are a true pro, but gotta say I think the griddle was too hot. Do you ever find situations where the griddle is on low but still too hot for more delicate cooking?

Thank you. Yes griddle was a little to hot. The stove with the griddle seems to cook a little hotter then the flat top with griddle. If you have this set up maybe just raise the griddle up itself with some angle iron.

Yes I did level the griddle. Use water to clean with? I never use water to clean with. Scrape clean, heat up a bit, put down some oil, let oil heat up and scrape clean now start cooking. 😎

Worked in several restaurants that use a commercial grill cleaner fluid (a grease cutter) and rub a grill brick on it then water and then scrape it and it all comes off clean (all while grill is hot). That's probably a bit much for a home grill though. That's after 16 hours of constant use daily lol

I scrape it clean when done cooking, cover it until next use then heat it up a bit with some cheap oil scrape clean and cook. Gets real humid here too during the summer. Are you using it weekly? Please tell me you seasoned your flat top before first cook? You must season it the very day you remove it for the box and then twice a year after. TIP: The more you use your flat top the better. Investing in a decent cover won't hurt either.

I never cooked on a Blackstone and have heard of the modifications that people have done. I know for sure I wouldn't like the grease trap on the back. Camp Chef needs no modifications works great the flattop part with the heat diffusers, wind screen and leveling screws. Camp Chef all the way the only reason why so many Blackstone sold is you get get them Wal Mart 🤢🤮. Sell it while it looks new a get a Camp Chef, it's not to late.

probably needs a good scrub dude, I use a chainmail scrubber that's meant for cast iron and let me tell you it works wonders, that with water while the top is still hot and bam instant clean! A good way to know if its the seasoning coming off is if it comes off in "chunks" larger than a quarter, or if you steam veggies that spot will be lighter than the surrounding areas. First things first is a good scrubbing then season like usually, then cook like you would and watch for those nickle to quarter sizes chunks or light areas

So I made eggs for the first time on my new griddle, wife would not eat them because they were a little brown, so I guess if I heat the top on low for 10-15 minutes then turn it off the temp should be better and not brown the eggs, that omelette looked awesome!

I haven't cook on a Blackstone but I have looked at them several times at the stores and have watched several videos on KZbin for Blackstone modifications. With that said I believe that Camp Chef is by far the better flat top. You know I watch a lot of cooking shows and on all of the cooking shows they say eggs are the hardest thing to cook. So screw what everybody else says I think you did a great job! Everybody is trying to talk me into buying one of these griddles, but honestly I think the only thing I would cook on it would be breakfast like you just did. A friend of mine bought one last year and both of us still prefer the taste of steaks, burgers and chicken done on a regular Grill, sorry.

@@BrianEibner You know I got a lot of health problems so I'm in the hospital a lot, and in the hospital that serve soft scrambled eggs. I absolutely hate soft scrambled eggs! I watch these cooking shows and they say that's the way they should be cooked, so the end up like risotto or something. But I hate them that way! I like hard scrambled eggs! The way you cook eggs would have been fine with me! I would have ate them everyday of the week!

Its a beautiful grill. I was under the impression that the Blackstone was the best in this particular class but, the design enhancements on the camp chef seem to be more of my style. And i wanna know who in the heck ate all of those sausages?

With a long spatula, you should be able to flip 3 patties at a time.

with my BlackStone 36 inch flat top, several months. You will not cook on a flat top every day. I would say less than 5 times each month.

I'm not so sure about that, think of it as a big pan. We did sweet corn (husk removed on the cob) the other night used water & a lid, steamed them adding water as needed.

True, was thinking about how many "uses" vs. how much time. Those burners are rather big so I'm guessing less than 10 uses if each use is about 45 minutes.

also, you are not going to use all 4 burners all the time. Most of the food I cook on my Blackstone is done with two burners and when I use all 4, they are not running at full speed. That 20 pound tank will last a long time.

I prefer over medium also, yolk cooked enough so it doesn't run out and stick to your plate but yet not a solid. Thanks for sharing and watching.

why do you scrape off the fat from the sausage and then add fat to cook the eggs? why not use the sausage fat to cook the eggs????

Dude, they're all damn near the same level of cooked lol You didn't bust the yolk on both the over-hards .. your over medium's were over medium-well and the basted's were definitely over cooked on the bottom. The sunny side eggs, however were great. Not being a dick just coming from a breakfast cook at a popular breakfast restaurant.

Yea I hear ya. I did break the second over hard yolk and my idea was to cook scramble on the cooler side when the other eggs were done out of the way. Things changed as I started cooking. Can I ask have you ever cooked with one hand and video camera in the other and then talk about it. It's pretty much "live TV" I guess. Thank you for watching and commenting. Oh yea I haven't cooked in a restaurant for 20 years and then a breakfast place 30 years ago. I did crack 10 eggs in a row one handed.

lol dude no need for the sarcastic hostility .. I was merely giving my honest criticism. I'm sure you have a lot of experience cooking eggs and other breakfast foods. Also cracking eggs one handed isn't super hard with practice but I've never done it while filming a video so I can't attest to that. Best wishes.

Thanks for the vid. I’m not trying to be negative but way to much color on the bottom of those eggs. Unless you are making a fried egg there shouldn’t be any brown

On the eggs or the griddle? Some people use salt to keep the eggs from sticking. No salt here, just pepper on the eggs. Thanks for watching and commenting 🍻
