I'm a philly fanatic. I make several times a month for the family and will eat everywhere that offers one, just to see all the differences. Good job on this one. Only feedback if not offended would be to slow down the cooking of the meat. I find low and slow for the thin meat creates the juiciest philly (not greasy), plus this let's the peppers and onions marinade more with the meat and gets the flavors packed throughout. Love the blue rhino. I have a StealMade plate that covers my whole kitchen stove. It awesome. Thank you for sharing!!!!

Born and raised in South Philly cuzzzz. He used the rite meat. The bread looks on point but not an authentic cheese steak by far. The authentic is ordered with or without onions. When ordering you would say “wit” or “wit out”. Then you would tell them what type of cheese. American, provolone or cheese wiz. Peppers are never cooked into the steak always put on after. If you go to Pat’s, Gino’s or Phil’s steaks in Philly you would see that stuff outside on the side. Not sure about the bacon grease or the buttered roll but you like what you like. It looked very good I must say regardless. I like American no onions extra cheese and the wife likes no onions extra cheese wizzzz! We are in vegas now and still on the hunt for the perfect cheese steak with no luck.

I use vidalia onion sliced supper thin, only 1 sweet pepper (small diced) for the flavor since hubby can't do peppers, shaved steak and fresh sliced white american on home made italian bread. The onion and pepper I cook with bacon grease til tender, top with the shaved steak and cover for a min just til I don't see pink, then I'll do a quick chop; top with american cheese til it's gooey and then cover with the bread, let sit for just a min then flip over and serve adding more cheese on top . Pretty good technique. Most of the pros seem to hold the bread open in their hand and put the meat in it with the spatula or lay the open roll on top of the meat on the flat top and then grip the meat with the roll and use the spatula to flip it over. Your way seems pretty easy and a little less risky for losing the meat.
@lavabeard59393 жыл бұрын
they do it like that because they're making tons of them. you shouldnt copy fast food techniques completely because they do things that you would only do if you made the stuff constantly, like holding bread with one hand and throwing meat in there. it takes a lot of practice to do it smoothly, and it only saves a few seconds. over the course of a day that adds up, but what is a few seconds to a home cook? better to keep your meat safe!
