If you wanna try a NON pokemon challenge, may I suggest to you Metroid Zero Mission without using the beams (not even for opening the doors) unless it's required (for instance at the start of the game)? It could be really creative, using all the other weapons instead, and kinda hard, at least at first with only a bunch of missiles at your disposal.

G/S with one Hoppip? It has very bad stats, not an incredible move pool, and is grass-flying, one of the worst type combos in gen 2 I think.
