I'm a Pastry chef. It's insane how convincing a few rolled oats are when you want someone to think the muffin is healthy. Top the caramel, white chocolate raspberry muffin with powder sugar and everyone thinks its super unhealthy. Top the same muffin with a few oats. Healthiest muffin ever.

I mean…I’m Canadian and Maple Syrup is kind of a food group here. Can’t stop won’t stop! 😂 In all seriousness though, it does make me a little crazy that almost EVERY vegan recipe I look up is trying to be “healthy”. I don’t want to be gluten free etc. I have started to just use non vegan recipes and convert them to vegan on the fly. I don’t always want whole wheat flour in my chocolate chip cookies! I’m so over this trend. I enjoy eating a primarily whole food plant based diet, but if I’m having a desert, I just want to enjoy it. Always vegan, but not always “healthy”.

You said it! My mom is gluten free and everything is even more healthified when we're looking for recipes that can accommodate both of us, than just vegan recipes alone. I don't want any of our birthday cakes to be low fat and sweetened with apple sauce/bananas/dates, I want it to taste like a damn birthday cake. Sam Turnbull (It Doesn't Taste Like Chicken) and Melanie MacDonald (A Virtual Vegan) are wonderful examples of vegan food bloggers who embrace the need for fat and sugar in moderation, and I love them for it.

I have two reasons for choosing coconut sugar over regular granulated sugar. 1. It has a slightly caramel flavor. 2. It has a much lower glycemic index which is important to me as a person with reactive hypoglycemia. For me, it is actually a healthier choice as long as it is still just an addition to the diet. I choose sweeteners most often :)

Interesting! I'd never heard that before about the GI so I just googled it to learn more, but the internet said, "Coconut sugar’s average GI rating is around 50-54, essentially the same as white table sugar. As a general rule, you can substitute coconut sugar for white sugar, but it has the same number of calories and grams of carbs so it will affect blood sugars in the same way as white table sugar can."

@@redloveballoon The coconut sugar I buy has an GI of 32 (maybe its because of slight minerals and fat content?), while white sugar, according to the table I got from a metabolic diseases doctor, has an GI of 60 to 68 . In the case of my disease, it is a big difference :) Of course, apart from the glycemic index, you also need to take into account the glycemic load. I also need to properly composing a meal to avoid a large burst of insulin and, as a consequence, a large drop in sugar levels. This is yet another issue. However, I can see that adding a teaspoon of coconut sugar does not cause me hypoglycemia.

While there is a non-trivial difference between sugars due to the monosaccharides having different biochemistry pathways and the ratios do matter, sugar is sugar and it doesn't matter if you get it from pepsi, cane sugar, or maple syrup it still has a caloric density of 4kilocals per gram. At the end of the day sugar goes into deserts and it doesn't really matter if you used basic granulated cane sugar, bee vomit (honey), or boiled tree blood (maple syrup and other tree syrups). But what you will notice is the difference in the trace aromatics responsible for the actual flavor in addition to the sweetness. I see nothing wrong with deserts being unhealthy, just eat them in moderation because "healthy" is a buzzword to sell products and no individual food will magically make you healthy. (Although in theory eggs, potatoes, and milk are all it takes for a nutritionally complete diet but that would get insufferably boring pretty quick, ignoring personal diet restrictions)

I don’t think it is anymore. I think that “trend” has passed. I say that even though I myself recently published a recipe that called for it. My recipe didn’t use it for health reasons though. It just happens to work well when making vanilla paste.

I'm actually not worried about the calories at all. I'm worried about my blood sugar and I heard that coconut sugar doesn't spike your blood sugar as badly as regular sugar.

1) Carbohydrates are a macronutrient. All sugar, by definition, is has nutrients because it is a type of carbohydrate. Whilst refined sugar (i.e. not whole fruit or veg) is devoid of micronutrients, fat and protein, it is not lacking in nutrients. While we’re at it, calories are a nutrient - the most important, I might add. The only “foods” void of nutrients are things like diet soda and sugar alcohols. 2) Date sugar is actually a whole food. It’s a high calorie and high carbohydrate food, and has lots of B vitamins and minerals, as well as fibre. It’s literally just dried dates, ground into powder. Black strap molasses is also a nutritious food, with high amounts of iron and calcium, as well as carbohydrates and energy. 3) Calories are not a bad thing. They literally allow us to live. Some people benefit greatly from calorically dense foods. If we eat intuitively (which we’re all born able to do), we’ll be able to eat an amount that allows us to love healthfully. Some of us have forgotten how to eat intuitively - from parents who forced us to clean our plates or restricting our intake in an effort to lose weight - and may benefit for a period of time from the guidance of a dietician or intuitive eating coach. However, no good comes from all this restriction and fear of calories or specific foods (or food groups). 4) I agree that maple syrup and coconut sugar are superior, nutrient wise, to cane sugar. I prefer the taste of maple syrup to cane syrup, and some like the caramel flavour of coconut sugar. When choosing refined sugar, just go with whichever one would taste best with what you’re using it for. 5) Mic the Vegan did a fun video comparing nutrient content of a variety of sugars, and it pretty much makes the point I think this video was aiming for, but with way less calorie phobia.

I think maple sap is really great for the tree because it helps the tree out not get too much pressure inside. The thing is syrup's wasteful - 40 gallons of sap for 1 gallon of maple syrup! I prefer eating the maple sap and birch sap. I drink maple and birch waters but no I avoid maple syrup. It's not raw! Same with coconut sugar. The thing about maple and coconut sugar is that they're much more ethical to a plant than most other plant sugars, so I am not crying over it.

Cane and beet Sugar irritate my IBS, in regular intake. Coconut Sugar or maple syrup or honey don't do that. Also the "Sugar High" in my Kids is remarkably worse with cane or beet sugar. So I Just use less for these reasons. That said I make jam and sweets for gatherings with regular Sugar. For stability and financial reasons.

You should definitely try sugar cane juice!!! We drink it all the time here in India and its amazing!!!! It's like sugar water but with a lot a minerality and character! They claim all sorts of health benefits but as with every other sugar adjacent you talked about in your vid, it's still sugar and must be enjoyed in moderation.

Thank you! Vegan recipes don't have to be "healthy!"My friend & I find recipes to cook together & so often, we can make swaps to more accessible & *much* cheaper vegan ingredients. I think this is why eating vegan has a perception of being expensive & complicated & is often conflated with WFPB. It doesn't have to be! Like another comment said, I generally prefer to veganise non-vegan recipes (it's usually easier, quicker & cheaper because I don't need my food to be organic, unprocessed, gluten free, salt free, sugar free, oil free; just animal free!)

I am starting to think every little bit matters. As a society eating so much nutritionally empty foods, I think eating anything with any nutrition in it is better than what is usually eaten. I personally dont make lots of desert, but when I make sweet things I mostly sweeten with maple syrup, dates, or honey and as long as I can afford it I dont plan to change.

And ‘healthy’ is such a complex word lol. I recently read an article about vegetable oil being detrimental to your health and olive oil being really good for you - I have not looked into the stats but I imagine it is a similar issue to coconut vs white sugar. I would be interested in a video on that as well!

I used to get a smoothie everyday that blended in whole pitted dates. Once I looked the nutrition, I then realized "yeah, that might be why I'm going to the gym and still gaining weight" oops. It was a PB banana coffee smoothie, so really much a lot going on that I should've realized added up.

Yeah that's why I don't really like smoothies. It's much more satisfying and lower in calories to simply eat the whole food, e.g. having one banana and one tbsp pb instead of using several bananas and several tbsp of pb in a smoothie.

I think people should just share desserts and eat them full calorie. It's ok to add slightly more fiber or sub something out that doesn't affect the flavor at all, but otherwise, let's stop trying to "healthify" stuff. Just stick to healthy food most of the time and make desserts for special occasions when you can share them. Portion control is key. I eat pasta, cookies, PB+J, and dark chocolate every single week and I'm 100 lbs. Just eat one.

I'm on the lowfod map diet right now because my doctor told be to. But my past "healthy" self was terrified of adding even 1/4 teaspoon of sugar, but now that's the only sugar I can eat right now. Besides fruits, but now I feel so much better mentally just eating a little bit of sugar. I'm a healthy weight, I have healthy skin. So in my opinion sugar is fine unless you eat like a crap ton.

So many people don't get this. I recently went on a diet and my coworkers were all like "well you can have some of my oat meal porridge" and "well *these* pancakes are made with so and so..." And I'm sitting there like "but it's so full of calories. I'm trying to *lose* weight here". And they just look at me weirdly and say "but it's *healthy!* Just because the ingredients are a bit better than the "normal" recipe, it doesn't make it healthy. And just because something is healthy and full of nutrients it doesn't mean it's low calorie. It drives me nuts. It's almost on par with people bringing in a salad for lunch because they're being healthy only to hose it down with dressing. I love dressing as much as anyone, but I'm not going to pretend it's healthy😅

My Granny's version of "healthy" dessert is stewed apple with cinnamon and cloves and a little bit of cream. A bit of sweetener is added after serving, but there are no other added sugars. Is it as delicious as an apple pie? No. But it does have nutritional value and it's a sweet treat at the end of a meal.

I have all the sugars just because I like variety. I try to make sure I keep quantities low, that I add it myself so as to be sure if quantity, and I do not consider them healthy. But they taste different and I like them!! Also some sugars go farther for less being added. Honey is just so strong tasting. I don’t like it as much honestly, but you can use less and the taste blends in with some recipes. And don’t take my maple syrup!!! I add like a tsp to salads and then I can eat a salad the size of my head and I will not apologize for that:p

Yes, calories matter, but when you have a toddler who doesn’t want to eat, calories matter in a different way 😉 I’m trying to pack as much as I can of “healthier” options in my son’s cookies. And Maple syrup on everything! It’s not easy, as most of my adult life I was doing the exact opposite.

I cook with both refined and "natural" sugars depending on my mood. I don't kid myself that they're healthier, but the less intense sweetness from something like coconut sugar doesn't trigger me to want more and more in the same way refined sugar does. Sometimes I want to enjoy something sweet without feeling totally sugar crazed. That said, I track calories daily so I am always aware of the calorie and nutrient density of what I eat. The calories never let me fool myself into thinking I can eat more of something just because it has a few more minerals than the classic.

I’m really lucky in the sense that artificial sweeteners taste the same as regular sugar to me. I know everyone is not this lucky so I’m grateful. Also I know everyone’s body is different but for me calories aren’t important at all. Personally I like to look at foods as a whole. The only thing I watch is my fat intake. Besides that, I eat unlimited carbs and sugar and make sure to eat lots of protein. Sugar is not the enemy for me personally.

That's what irks me when I try to find recipes for some sort of breakfast cookie or bar or similar. They l say "healthy" but then contain sugar and pretty much are just cakes or cookies. Just because you add oats and raisins doesn't automatically make it a healthy breakfast food 😵💫 That's why I will never understand why people have banana bread for breakfast. It's simply just cake. It's not healthy because it has bananas in it and is called bread lol

These sugars only seem healthier because the flavor quality of Maple Syrup is a million times better than Cane Sugar IMO. Also, anecdotally, my body just "feels better" eating maple syrup over cane sugar. I don't know why. I don't know how but all I know is that my body prefers maple syrup over cane sugar. I like to use a little cane sugar, combined with splenda. It tastes much better when you combine. I also use coconut sugar sometimes, only because that taste is good. Especially with thai coconut desserts!

I love both coconut sugar and maple syrup. I don't fool myself they would be actually healthier, but they add a more interesting sweetness, I use them more like a seasoning. I use actually a little less from those than if I would use regular refined sugar, just because of the added flavor. :D And I often mix them with erythritol, whch is actually a healthier option.

I know it was just a side note, but I am intrigued abouter butter vs. coconut oil: The information I picked up points towards coconut oil being extremely bad for your health. Even worse than butter. Simply because... it just consists of saturated fat (~87%). Butter only has 51%. I try to avoid coconut oil like the plague for that reason, which is sometimes difficult for vegan food, but it works.

I totally hear you, but healthy and low-calorie don't mean the same thing at all, so I'm not surprised you were unhappy with the search results. High-calorie foods can be highly nutritious. A better thing to search for would be low-calorie peach crumble ;)

Nooooooo! I love maple syrup. I'm from Canada too :) I add 1 or 2 tsp to my salad dressing to balance the acid flavour. But indeed dates are the healthiest sweeteners according to Dr. Greger. What I like about maple syrup is that it's so sweet, you need very little to enhance the salad dressing.

The reason I was substituting with coconut sugar was because it was described as "low glycemic" and I was being conscious of my blood sugar. I still treat it like regular sugar and generally eat a low sugar diet. Do you have any comments in regards to that? Thanks! Love your videos 🖤

Dr. Greger said that "date sugar" is just crumbled up pieces of dates, so he named it the healthiest sweetener.

I never believed maple syrup was in recipes because it's healthier. It's just very delicious. If I want to be healthy I sweeten with dates.

Unsweetened applesauce or mashed banana are my sweetener preferences-they can go a long way and are good binders in place of egg/butter

Coconut sugar gi is 50-54 vs white sugar who has 65. Still high but I suppose it makes a bit of a difference

That’s still really high though. It really doesn’t make a difference especially if you’re eating a dessert. Coconut sugar tastes so good though, that’s why I use it for certain recipes

Also I wonder if I combine it with lower GI foods and fiber, for example chia seeds/flax seeds, wouldn't that change the GI and glycemic load? I think overall it should make a difference when compared with other high fat high sugar recipes... I'm also thinking about sourdough vs white bread, the former has

Sugar cane juice (or caldo de cana) is a really common thing to drink here in Brazil, usually in kiosks and such. It's also common to add a little bit of lime juice. It's delicious

@4:13 Date sugar, FYI, is actually whole fruit / whole dates. No processing other than dry and grind but you get the whole fruit. I tried it thinking it was like coconut or date sugar. Turns out first cup of coffee I made with it rehydrated it into a bunch of date bits floating in my coffee that now tasted like a whole date. Just an FYI. Love the video still :=)

You know what I do with those 4 dozen cookies? I freeze them up, and bake one in the toaster oven whenever I feel like it. Healthy? No, but very convenient !

Healthy doesnt mean low calorie, otherwise nuts and avocados are unhealthy. Date sugar sugar might have a good bit of calories but they dont affect your blood sugar as much as regular sugar, that is what it means to be healthy, plus there is fiber in it.

I agree but idk I’ll admit the small amounts of extra minerals in maple syrup do kinda make me feel less guilty when I add a tablespoon here or there to a sauce lol, plus the flavor is delicious. Wouldn’t say it’s a “health food” tho

You state that coconut oil is healthier than butter…how do you justify that statement? You later suggest that butter is unhealthy due to its saturated fat content, however butter is only approximately 50% saturated fat whereas coconut oil is closer to 90%

I simply use coconut sugar and maple syrup because they contain half the amount of sugar as cane sugar 😊

That's not true-- they contain the same "amount of sugar" (carbohydrate) per gram. The difference is the fructose/ sucrose/ glucose ratio.

Date sugar is just dried whole date powder so it's the same as whole date. It is not process and yes it has calorie but it won't spike your blood sugar because it has all of the fiber. It's much healtier than every other. It's the same as eating fruits. Please don't spread misinfornation

As with anything the least processed version is preferable but it also shouldn't be labeled as healthy. This is like the argument I always have with my dad about artificial sweetener, he compares his one soda a day to my 1 tsp of Splenda in my tea everyday and says his is "way healthier" because it's "natural." 🤦🏼♀️
