I've been watching you for awhile now Jake; one of your reviews of the K02 was my first. You said you had sharpened over 100 knives with it already and were ready to comment on it. I was blown away! Too often people take a product out of a box and give you their thesis of how it is... Like everything you do; it was well thought out and worth the time to watch. Thanks for all you do Jake!

I take the responsibility of being a reviewer seriously. To take an item out of a box and make comments is to give a first impression, that is not what a review is. To review something it has to be experienced over enough time to get very familiar with it, no matter what that product is. Often flaws in products are not found until the device has been used extensively.

My 360 Blitz Black kit from Gritomatic with Venev Centauri Diamond Stones is freaking awesome! Freaking sharp! One nice feature of the adjustable guide in the back of the 360 is that you can actually use that for stone thickness compensation....

I agree the 360 is the only way to go. Konstantin over at Gritomatic told me that sales of the base Blitz went very slowly but the 360 is flying off the shelves. There is a reason for that. I assume TSPROF designed the regular BLITZ first and then figured out that a few upgrades would make it much better so they decided to sell it both ways. Often companies make a more budget friendly version of a product just to get people to start to check out the product. It is the lure, the hook, to get people interested - but they know that the more developed product is what people really need. Thankfully it doesn't cost a lot to upgrade a Blitz to 360 status.

Thank you very much for your review Jake - it gives me an idea of what the Blitz line is about. It looks very nice but is perhaps underpowered for what I might want to use it for. Luckily my mad science brain has me tweaking my homemade system to further improve on the quality and ease of use. Take care, Dave

Curious choice of words as all the power comes from the human - I suspect you mean you would need to sharpen longer blades than can comfortably done on the Blitz. Check out the Kadet - it comes two ways and the Kadet Pro is worth the extra cost. If that too is too small then the TSPROOF K03 would hit the mark - that is my main sharpener that I use in my sharpening business. I have videos of the Kadet and K03

To get to the inside clamp screw you need to elevate all the way to the chefs knife position (highest position). Easy to get to screws when the clamps are rotated to the vertical position like you had it.

Thank you for the review. I appreciate the level of detail that you have in all of your reviews. This sharpener seems to be perfectly sized for my sharpening needs, but I had two concerns. 1) Will the Knife Clamps work with full flat grinds? 2) Are the gear teeth of the Angle Adjustment mechanisms Aluminum on Aluminum? If so, would you be concerned about wear over time? Do you lubricate Gear interfaces?
@CanadianCuttingEdge
@CanadianCuttingEdge 3 жыл бұрын
Thanks for the kind words. I like to provide CLEAR understanding of the knife so viewers can make genuinely informed purchase decisions. Yes, the clamps work with full flat grinds as long as the main bevel isn't at a very sharp angle. Also, on any of my sharpeners, I often take full flat grind knives apart and sharpen the blade by itself - that gives me the flat area around the pivot to clamp the knife down at exactly the right angle and the other clamp further down the blade is just a helper clamp. 2) I think it is all hardened aluminum, but I will have to ask about that. So please email me so I remember to do that - CanadianCuttingEdge AT gmail.com. Modern aluminum can be quite durable, and it is more of a detent system and not "gears" I can try to get some detail pictures to email to you. Then if it merits it I could use your question as a basis for a special video on the subject. They only recommend lubrication in the one spot I showed in the video.

Hi jake thanks for the awesome review I thinking of ordering one I have one concern can I use it to sharpen my scandi grind without micro bevel like helle knife or any true scandi Thank you so much
@CanadianCuttingEdge
@CanadianCuttingEdge 3 жыл бұрын
For sure, as long as the blade isn't too think to fit the clamp. if it fits you can match and sharpen your scandi grind - if the angle on it is consistent already. if the knife has a variable bevel grind then it will be impossible to sharpen on ANYH guided sharpening system without investing a LOT of time taking of steel to make the grind even all the way down the blade. BUT - most scandi grind knives I've had do have a fairly good consistent scandi bevel angle, so your chances are quite good.

Hello Jake, i hope youre reading new comments on your older videos too. Are you planning on doing a review on the Kadet from TSPROF as well? I just watched your review and I gotta say I really enjoy your review style. Unfortunately the Blitz is a bit too small for my needs (mainly kitchen knifes) and the K03 is just a bit too expensive and bulky. I feel like the Kadet would offer a nice middle ground, what are your thoughts on that?
@CanadianCuttingEdge
@CanadianCuttingEdge 3 жыл бұрын
I read ALL new comments. BUT, I don't usually read responses to my responses, I don't have enough time for any extended discussions in the KZbin comments. So always make a brand new comment if you want to be sure I see it. I still have not been able to get my hands on a Kadet to review. I cannot afford it on my disability pension, so I will have to wait. BUT, from what I have seen of the Kadet it could be a very good buy. You may want to check out my reviews of HAPSTONE systems, which I also like quite a lot, and I have reviewed several of them. The MAIN thing with sharpening is the quality of stones you will get, that is even more important than the system that holds the blade, in my opinion. I like the VENEV diamond stones for all premium blades and even most midgrade knives, and for low budget stones I like BORIDE CS-HD stones the best (VENEV = Russain, and BORIDE is made in USA).

Hello I have a question for you I just brought a blitz 360 complete it came with the diamond stone and have only used it 2 times and I just noticed the very course F150 has become very smooth compared to how it was big difference . If u look at the diamond plates it looks new it's not dirty I used the eraser method to clean it but still very very smooth and I did not use alot of pressure . I was told this is normal ? Can you confirm that since u have diamond plates thank you
@CanadianCuttingEdge
@CanadianCuttingEdge 2 жыл бұрын
Hi Charlie, There is too much info missing. You can buy the Blitz with a variety of types of diamond stones. I don't know which diamond stone you have - IE the brand. Various types respond differently one from another. It depends on which ones you got with your Blitz. When you say "smooth" do you mean that it no longer performs well at sharpening? Being smooth to a human finger isn't a helpful way to measure how well a diamond stone will perform. If it no longer sharpens well then it is either defective or very budget stone that. The most budget diamond stones FELL very rough when they are brand new but then after just a little bit of use the diamond stones that have just a bit of contact with the binder break free and then it feels smoother. Of course, this means that you loose some of the diamonds that are doing the cutting. The people who say it is normal for a diamond stone to feel much smoother after a short period of use are talking about the lowest cost diamond stones. the lowest cost diamond stones are also the lowest quality diamond stones. Did you use the diamond stone dry or did you use it wet? Some brands say to use them dry but I have found that most (not all) work best if they are a little wet. I like to use soapy water in a spray bottle, it helps move the metal shavings away. I prefer VENEV brand diamond stones (Russian). they come in a variety of sizes and shapes and quality ratings. Some have a percentage of diamond listed - Standard diamond density is listed as 25%, the 50% have twice as many diamonds per square inch, and 100% have 4 times as much diamond density per square inch. I have a set of 8" long 100% stones and I have sharpened hundreds of knives on that set and it performs as well as it did when it was brand new - you get what you pay for. I hope that was helpful. If you have more questions feel free to email me - CanadianCuttingEdge AT gmail.com

Will that sharpener sharpen a small knife like 1/2inch wide at a 17 degree per side angle without hitting the clamp I have that problem with my wicked edge
@CanadianCuttingEdge
@CanadianCuttingEdge 2 жыл бұрын
I have some knives in that description and yes I can sharpen such all the way down to 15° per side. The clamps on this are nice a small for exactly that purpose. BUT, even if your stone hits the edge of the clamp, it's not as hard as blade steel and there is nothing wrong with knocking the corners off the clamps - but one wouldn't want to thin the entire edge of the clamp.

Can you use Falkniven stones in this? I love the corse diamond and fine ceramic on those. I can actuallt get something close to a mirror on the Falkniven ceramic but the edge is all over the place.
@CanadianCuttingEdge
@CanadianCuttingEdge 3 жыл бұрын
Stones like the DC4 are designed to be used in the hand, but yes, you could use them on the Blitz but because they are so wide, they will block a lot of your view and so they won't be very useful. I don't know, does Falkniven make more narrow stones? if yes, as long as they are no more than 6 inches long then they will work on the BLITZ.

Oh yes I can. TSPROF K03 is great, but costs $595 I have the older K02 from TSPROF, but just recently I got an updgrade kit to turn it into a K03. This system is awesome, but not cheap - www.gritomatic.com/products/tsprof-k03-standard-knife-sharpener I also like the Hapstone R2 system very much. www.gritomatic.com/collections/hapstone-sharpeners/products/hapstone-r2-standard-knife-sharpener $270 If you want to go more budget (still a fair chunk of change) Hapstone has the V8 a very nice upgrade from the V7 (which I have reviewed) It uses magnets instead of clamps to hold your knives, very good for wide flat kitchen knives - www.gritomatic.com/collections/hapstone/products/hapstone-v8-standard-knife-sharpener - $180USD I always tell folks to get the very best sharpener you can afford. A great sharpener will last your lifetime and it will make sharpening from a chore into a joy. Because when you start getting great results from a well made sharpener you might just look forward to sharpening. I know that change happened to me when I finally got a well made sharpener.

@CanadianCuttingEdge
@CanadianCuttingEdge 3 жыл бұрын
I do know that TSPROF told me that they were hopping to have the knives on Amazon.ca very soon but that is no guarantee. Thankfully the new trade agreement between USA/Canada/Mexico was finally ratified in July but the limit before you have to pay duty is now $200 so you would also very likely end up paying duty to import the Blitz to Canada. Certainly it would save you a fair bit in shipping to wait, so I would wait if I could wait. If you can't wait I would recommend shipping with tracking - I can't recall what the shipping options are because I have everything sent to my friend in Nebraska by default and he then forwards items to me - and I haven't ordered anything large from Gritomatic this year so I am not sure how to advise which shipping option to recommend from Gritomatic. Opps, I just checked, and Gritomatic is sold out of the Blitz for now. So maybe it would be best to wait for Amazon, but in case I would put my name on the "notification" link on the Gritomatic page for the Blitz so that you will know when he has more in sock so you can get it ASAP. But if you really want it soon, order it from Russia. I get most of my TSPROF stuff directly from them and I only had to pay $28CAD customs fees because it was sent in the mail - so much cheaper customs fees than when packages come via a courier because they add so much in processing fees when taxes/customs get charged at the border. Just something to consider.

The only thing in the BLACK version that TSPROF doesn't offer in some of their packages is the fact that they digital angle finder is included. to be fair TSPROF does sell digital angle finders, but I agree that they should have at least one of their packages of the BLITZ sell with one included. Konstantin over at Gritomatic also makes it much easier to choose various sharpening stones right on the same webpage whereas TSPROF has many stones too - but they make you go to a different page on their site to order them. Konstantin knows marketing better.

@@CanadianCuttingEdge The BLACK version comes with the Hapstone stoppers (has springs instead of orings). Much better in my opinion. Also they give you two screwdrivers (1.5mm and 2.0mm) instead of just one driver and Allen keys. Choice of stones is a BIG adavantage IMO too.

Website says blade width max 25mm, is it really that small?
@CanadianCuttingEdge
@CanadianCuttingEdge 2 жыл бұрын
I think you are referring to the measuring from the spine of the blade to the cutting edge. That is a bit arbitrary, I have sharpened knives that have up to twice that - BUT that's really pushing things. They are trying to say that the bigger the blade the less of the stone you will be able to use as the stone holder rod is only so long. If they offered it with a longer rod then it could accommodate a bigger range of knifes. I might put a SOFT limit closer to 35mm for that measurement. It certainly is not designed for kitchen knives.

Do the clamps damage the knife?
@CanadianCuttingEdge
@CanadianCuttingEdge 3 жыл бұрын
They can if care is not taken. The risk is is mostly in 2 things: 1. if the clamps are a bit too loose and the knife moves in the clamps - that can scratch the surface. but I have not had any damage when I tighten them well 2. if I hold onto the handle of the knife and use that to help rotate the knife to the other side. This puts extra pressure on the clamps in a sideward pressure which can cause the knife to move in the clamp, again especially if problem #1 is also happening. These two things are true of ALL knife sharpening systems where a knife is held in a clamp. I sometimes put painters tape, or regular masking tape on the blade to protect it - BUT, that means I have to tighten the screws down tighter so that there is no movement of the blade. But usually I just make sure the clamps are tight enough and I have not had any knife get damaged on the Blitz. ( too tight and I guess it could damage the screws on the clamps) When I bought my first guided sharpening system that held the knife in this type of clamp I did indeed scratch up a number of knives until I learned those lessons.
