Recipe: 4 lb dried navy or pinto beans 1 pkg bacon 4 c diced onions 12 cloves minced garlic 4 c chicken stock 3 c brown sugar 1 -2 c molasses 1 c ketchup 1 cup ac vinegar 1/2 c worcestershire sauce 1/2 c yellow mustard 4 tsp good salt 2 tsp cayenne or Korean red pepper 2 tsp black pepper Sort, rinse and drain beans. Place beans in a large pot and add enough water to cover by 2 inches. Bring beans to a boil for 5 minutes. Cover and turn off heat and let sit for 30 mins. Dice up bacon and cook until brown. Drain on paper towel. Leave 2 tbs of bacon in pot and add diced onions and garlic. Cook until translucent. In a bowl mix stock, brown sugar, molasses, ketchup and applied codar vinegar, worcestershire sauce, mustard, salt, red pepper and black pepper. Wish ingredients together. Drain beans and add to the pot with the onions and garlic. Add in bacon and stir together. Heat for about 5 mins. Add sauce ingredients stirring good. Bring to a boil for a couple of mins. Remove from heat and ladle into prepared pint size jars. Leave 1 inch headspace. Use slotted spoon to get majority of beans to 75% full and top with mostly sauce. Wipe rinse with cloth and vinegar. Place lid and ring on jar and set into your pressure canner. Continue this process with all the beans. PC for 75 mins at your elevation pressure.

Thank you! I’ll for sure check this out and if approved I’ll be adding this to my pantry shelf. My much better half loves Bushes baked beans and I’d love to replace those cans with jars.

I remembered ordering from this website for some other wooden utensils that I was pleased with. I didn't see my ladle, but some similar. They change things up over time according what artists have what at the time. www.localwe.com

In the video you said to add 3 cups of chicken stock and one and a half cups of brown sugar, but in the recipe you have 4 cups chicken stock and 3 cups brown sugar. This sounds so good, but I sure would like to know the correct amount for these ingredients. Thanks!
@cathyscountrylife Жыл бұрын
Hey! Later in the video I mentioned that I added another cup of stock making it 4 cups total. The original recipe called for 3 cups brown sugar, but I didn't do all of it because with the molasses I thought that would be too sweet. I'm sorry for the confusion! You may want to start out with less sugar and do a taste test and see if you want more. Thanks for watching 😊

Stupid question do u have to use the pressure cooker? Im new at this❤
@cathyscountrylife Жыл бұрын
Hi! Yes a pressure canner is how these need to be processed. This is a low acid food and for safely canning it needs the high pressure.

@@cathyscountrylife Thank you so much for sharing. I'll have to invest for one pressure cooker. I am really unsure of using them. Scary for me. Lol
