ATTENTION: Couple things real quick that have come up in the comments below. #1 Since I did not show me canning, we have had a few questions about the liquid in the jars. It is the large pan of water I had boiling on the stove, and you fill the jars to 1" head space. #2 A few people have mentioned that other sources say you should can ham and beans for 75 minutes. This is likely correct. However, we automatically can anything with meat in it for 90 minutes (pint or quart). This is just a matter of "how we do it" - but if you wish to do it differently, you are certainly welcome. Dry beans are very dense and we like the extra time for them to cook through. They are also alkaline, so the extra time is ok there too. And there is meat involved. So this is how we choose to can them. It certainly does not hurt them, and it gives us some peace of mind. Watching videos like this can help you ease into pressure canning... It is not difficult... You just have to work up the nerve to do it... After the first time, you wont believe how easy it is...

JB, an easy way to practice is to simply can some water. It'll be emergency drinking water, until the time you need the jars for something else. Do all the prep work for your equipment according to instructions with your canner and/or the Ball Blue Book. Fill and process your jars, as if you are processing chicken broth. This lets you follow the directions and actually see the process without putting any food at risk (for your peace of mind.). Once you see it and do it, you'll be more comfortable with next trying a relatively inexpensive food. Perhaps, a large bag of frozen green beans from the grocery store. All the prep work has been done. Just let them thaw in the refrigerator. Rinse in cool water to make sure they're thawed. Then follow the directions for cold pack. Canning water and some green beans and you should be all set to can whatever you'd like to store in your pantry that's suitable for pressure canning. Enjoy the journey!

There's nothing better than ham & white beans! We add bits of celery & carrots and they cook out like the onions but add wonderful flavor. I also cook the ham bone for 2 hrs in the pressure cooker and it makes beautiful tasting broth.

Whenever I make bean soup or split pea soup, I use chicken bouillon cubes in place of the salt. I think it gives the broth richness. Just throwing it out there. Enjoyed the video.

Finally I have found somebody that has a stove and a canner like mine could you please tell me when you can like that if the water almost all boils out or how much water do you put into your pot and also does it put any stress on your stove I'm hoping mine don't have little stress cracks please and thank you

For a 90 min cook, you want about 3 qts of water or about 1/4" above your bottom plate, and you can add a dash of vinegar to keep away water marks if you have hard water... I am not sure what to tell you about your stove and canning... Ours is rather new, and was rated for canning, but we canned on our old glass top too without issues...

Those beans look delicious. I enjoy a meal of ham and beans with cornbread and grated onion. I usually add a pinch of baking soda to my beans to break down the triple sugar that causes gas in some people.

It sure is a time saver to have on hand, and very versatile... You can also just do beans... Which is a good way to use the empty space in a canner... Always keep some dry beans on hand... Remember its 1/2 cup to a pint, and a full cup to a quart... Then you will always be able to fill your canner...

I grew up in Lima, Ohio and could never eat Lima beans because people wrongly said it was named after them... It was actually named after Lima, Peru which is where they shipped the quinine for yellow fever from (to Lima, Oh) when they drained the black swamp of northern Ohio into the Erie canal... LOL... LOL... Well... Actually, it was I that taught Tina how to pressure can... She was afraid of it for a long time... Though I have learned many water bath canning tricks from her after watching my Grandmother do it for years...

They looked great... Not sure why but my household will not eat soup or stew with ham in it... serve beans and onion as a side dish and ham as entree. Then they will eat it go figure😆😆😆 Have a great evening ⛄⛄⛄

They can last MANY years if the lid is sealed, but 2 years is the rule of thumb... Around here, we like to can enough that we eat most of it in 12 months, and then we know it will always be great !

My grandpa always did all the canning, my grandmother was scared to do it. She never did come around. Is it 90 minutes for pints or is it 75 minutes. I do not like to put any seasoning in mine. I can season them when I get to opening and using. Great Job Mark. What brand of those lids ,do not think I ever seen them before.

They were some old Mainstay lids I think we got with some jars we bought a while back... They are not my favorite, but beans and ham don't stay around here long... LOL As a rule, pints or quarts, if it has meat, we can it for 90 minutes... You may, however, find directions that differ... It just works for us... As for seasonings, we keep it sort of to the basics so we can do the same - season to taste after opening... That is a good piece of advice for anyone...

I got it a few years back on Amazon when I bought Tina that stainless table... Because she is only 4' 10" I had her hold a knife out at her comfortable chopping height... Then I took away the 2" for the thickness of the board, and cut the rest off the legs of the table... It is customized just for her... LOL

@@BumbleBeeJunction Great idea on customizing the table. My sewing table is trimmed down to my size, so my arms are at the correct angle, when sewing. Makes life so much easier.

Yummy. We are hoping to get a pig and have it processed. We don't use a lot of ham so we will have the hams ground. However we do get leftover Christmas ham. But sadly cured, brined & corned meats are not safely canned so we freeze it. But man it's good in the crockpot with beans...cornbread..(upside down cornbread..need to try that). ✋👍❤🙏

Canned food is good for as long as the lid stays sealed (can be many years) but food begins to lose texture and nutritional value at 2 years... We usually just can enough that not much stays around here longer than a year, and it is always excellent...

Love this recipe, thanks for sharing, I love to use smoked ham & ham hocks when I do bean soup so here's quick question: Can I use the liquid (water) where I boil the ham hocks & the smoked ham bone to substitute the water in the jars or would that be too much? Thanks, stay safe & blessed 💞🙏

Oh yes... If you have the bone broth, absolutely use it... I had considered even just throwing the trimmings off the ham into my water for a few minutes before canning and then it slipped my mind... But yes, absolutely use it !

I make bean soup or split pea soup when I have leftover ham and/or ham hocks. I’ve never canned them-I don’t have a pressure canner. Similar recipe; less salt, with bay leaf and diced carrots and celery.

Those do look yummy, only thing mine wouldn't last. My hubby would eat them all before I got to eat any. Only beans that I don't care for are Lima soup beans. I do my beans with onions, salt and pepper. Ham bone when I have one.

It really requires very little when canned with the ham... Most times, we only use salt (more for taste than a necessity)....

We process all meat for 90 minutes, especially in a dense pack like this (beans)... You want to ensure heat penetrates all the way through the contents... Its more of a case of better safe than sorry...

@@BumbleBeeJunction Good point. The main worry with canning is under processing - either pressure or timing. Processing beyond the recommended time generally isn't a safety issue. (I don't know of any exceptions.) At worst the food may be a bit overcooked. At best, its peace of mind, IMO.

When it comes to canning ham and beans, it is just a personal preferance as to how much to add... Usually I figure out how many cans I want to do, and then just divide what I have as evenly as I can...

@@BumbleBeeJunction I ended up making 10 quarts of about half ham and half beans and used some broth and it all looks good. It is just too bad that ham gives me a lot of joint pain so I can't eat any of it. and this was a natural ham from a local farm that cost a bundle. I am sure I will find people who will love it though...

Quick question....just curious....I always just take my canner of the stove and open the lid and take them out in the morning, the next day. Why do you remove them so quickly?

We used to wait till the petcock fell and we would just open the lid and remove the jars (often still boiling inside)... We learned that if we would crack the lid and leave it for 15 or 20 min, then we would not have jars boil out (low liquid)... Usually we do it because we are canning multiple loads, but in this case, I guess it was just habit... They are all fine, as they usually are... No worries...

ham and beans soup was not something we grew up on. I don't know why but maybe as my daddy is not big on soups and stews. I love them so I am getting ready to give making ham and bean soup.

We didn't have much ham left but I did have enough to ham peas I'm the only one that eats it but I will be making pinto beans so I can use the ham bone. I can bake beans but never really thought about other types.

You can can your pintos much the same way... 1/2 cup dry for pint and 1 cup dry for quarts... Then add your bone broth to 1" headspace and process 90 min....

My Ball Blue Book say's 75 minutes for pints, is it a misprint!

It's not a misprint, or I highly doubt it anyway... We can all meat (pint or quart) for 90 minutes... Especially with something as dense and alkaline as dry beans... You need the heat to reach the center of the jar, and have enough time to keep it there for a while... Please remember, this is simply how we do it... You are welcome to follow the Ball book, and we encourage people to do so if they have any doubts...

We do all meat at 90 minutes... Especially with beans which are super dense... Need that heat to penetrate all the way to the center... I know others say differently... All I can say is that I've eaten it for a long time, and I am still here... LOL It doesn't hurt to know for sure...
