Meaghan, you had said in one video “if you haven’t had a fresh potato right out of the garden, you don’t know what you’re missing.” Well! We dug just a few of our Yukon golds last Friday, cooked them up, and I was so proud. My first time growing potatoes. 👍🏻 Even my husband was impressed! 😂 so glad and grateful you all are ok. So many prayers for the people in West No Car and Tennessee. It sounds just awful. If you find a reputable, honest place where we can donate, please post it. Thank you. Hugs from So Cal. 🥰

Morning y'all 👍🤓. I've never tried it that way either. Usually treat the sweet potato as you would a squash in one inch cubes🤔 interesting, thanks for sharing. With loss of power lately I've Ben pressure canning versus freezer. Too much to chance if power goes out. I like sneaking in some sweet potatoes in mashed potatoes 👍.

I've only done that once, boiling them first, from that messy kitchen time, I peel, chop, jar and can.

Hi Megan, I’ve canned sweet potatoes for years . I just peel them and cube , put in jars cold pack with water pressure can for 90 minutes for quarts. And they are fine. Hope yours turn out great

Don't use the ball book I have canned several taters (Experience) I do about one half inches pieces Water bath one hour If you pressure can them they get to soft

Meghan, when you pick corn just pop a kernel with your finger nail. If the liquid is milky it is ready.

Yikes I'm soo glad the tree didnt fall on any of you! Oh my gosh, those sweet potatoes are huge! I saw them when you harvested them, but wow! They look even bigger now that you're cooking them! :) That casserole looks great! I always just make them on the stove with brown sugar and butter, but that looks great! My daughter in law is going to LOVE that T shirt! She's WV appalachian. I've just adopted appalachia for some reason, but I'm getting one of those shirts for myself too! 😀

I can sweet potatoes 2 ways......one in a light syrup and the other just plain. If I want some thing sweet....it's the syrup. Pies etc. Plain one I use as mashed potatoes or in a casserole. Either way you can't go wrong.

I don't buy my fella's tee shirts from box stores, generally. The last 2 I got were from a trout derby he was in and a mother/daughter mobile coffee hut. I think one from you might be nice. His birthday is in November. Make sure you have enough XLs. 😊

You can cook them with your other potatoes and mash them makes a beautiful thanksgiving presentation (because the mash potatoes have an tint of orange).

Since they are so soft, maybe you can mostly use them in baking. Like pie, bread, cookies, biscuits. Stuff like that sounds delicious 😋

Andy and Megan it breaks my heart that Asheville got so much water damage and then the insurance isn’t wanting to pay for some because they didn’t move their camper a 100 feet away from where the water came in but since it flooded so bad how could they know what to do

If that sweet potato casserole tasted even half as good as it looked, it must have been extraordinary! I noticed one advantage of boiling the sweet potatoes before peeling and cutting them is they’re much easier to cut! I thought that looked like a fine meal! Those were perfect grill marks on the burgers!

I notice you dont put any kind of seal on your pressure canner and dont put anything on the rim..is this a normal thing? Ive no idea as originally from the uk so only use waterbaths.
