For this Jamaican Brown Stew Chicken you'll need...
4 lbs chicken
3/4 teaspoon sea salt
1/2 teaspoon black pepper
1 tomato
2 scallions
1/2 medium carrot
1/4 red bell pepper
1/4 yellow bell pepper
1/4 green bell pepper
1 scotch bonnet pepper
1 1/2 tablespoon light soy sauce
1 1/2 tablespoon Caribbean browning
2 tablespoon tomato ketchup
3-4 tablespoon olive oil
1 tablespoon jerk dry rub
8 pimento berries (allspice) 4 cloves garlic
3 slices Ginger
1 tablespoon smoked paprika
2 cups water
2 tablespoon chopped parsley

It's refreshing to realize that at the end of the day, so many recipes from different parts of the worls end up being very similar in approach. The only difference are the ingredients you have on hand. We're more similar than we are different.

So many recipes today are shall we say advanced versions of what’s known as ‘peasant food’ ….primitive folk just threw into a pot whatever stuff they had to hand…added herbs, spices for more flavour, then set it over a fire…we’re lucky today we have such a wonderful variety of worldwide foodstuffs to be able to use in our cooking.

Yeah many similarities in regions that were conquered/colonized by europeans or traded with them. Many differences in other areas. There's only so many ways to apply heat to something. Simple trial and error taught people the basic cooking methods, and traders/historians spread others

Hello Sir, I want to thank you ever so much. I've tried to make this dish 3x's in the past, my sister told me to give up. She said if this is the only dish you can't make, who cares. Of course, I cared. I began to watch to you do it over and over until I decided to follow your examples yesterday July 6, 2023 with my full preparations. (I must say, my daughter makes this dish and it is phenomenal. I can't stop eating hers. But she has moved to a different state now). Therefore, I had to learn. After my preparation, I placed in the refrigerator over night and remembered your full directions and made everything just so. FINALLY! I did it🎉 I was so happy. I recorded and took pictures of everything. I tasted the roue, if you will, and it is fabulous with the spice of the cut in half pepper, oh my goodness. All I have to make now, is the coconut rice. I've made that before and dinner is done. Again many thanks. Once I figure out how to upload my photos for you, I will send you pics. Again, many thanks.

I could not wait to make this and I ended up making it on Sunday, August 1st. It came out absolutely phenomenal, only added extra ginger cuz I love it. I am just one person in home at the moment and I manage to go through all four pounds in less than 4 days. Yes I ate most of the chicken without anything else, but I did end up having it with white rice and it was outstanding also! Thank you Chris! If I could upload photos right here, I would

Made this again last night. Hits every time over some rice & peas.🔥 I just always add a tablespoon of grace’s jerk seasoning in my overnight marinade for the chicken.

That's a good point about using the dry rub instead of the all seasoning blend!!! Gonna try that swap out cause salt is coming in from so many other directions already

Some tips for anyone wondering what "Caribbean Browning" is. In American grocers, you're looking for "Kitchen Bouquet" browning sauce. For folks that have more of an asian stocked pantry, "Thick Soy" sauce or "Chinese Dark Soy" sauce are great replacements.

How about adding molasses? This may change the flavor too much, could it be a substitute? What’s your thoughts?

Very little of molasses would work. But you can make your own browning by cooking down dark brown sugar with a little water. Check out how to make browning on you tube

Yeah... I made your recipe, minus the parsley and I used ground ground allspice.. but, I'm Italian.. and I MUST perfect the flavors.. this got me going tonight and I thank you. Next time I will marinade it over night, but I have to eat this tonight. I've always told the guy at the Dutch Pot.. not to hire me.. because I am going to learn how to cook, and then quit and make my own. This is easier than marrying a Jamaican woman...

Hi Chris! Another suggestion for you at this time of year- add fruits! In particular, I have been loving the addition of fresh peaches, skins removed, pit removed, and sliced up over the pot so no juices escape! The peaches add that hint of summer to the heat of your brown stew (and they also add a great smell that combines somehow with all the other wonderful smells). I prepare this stew on my outdoor grill, and watch my neighbors gather round! LOL! Happy cooking, Chris! Stay healthy!

Saw this video and had to start the marinade that day. Cooking it turned out really easy and straightforward. I didn't have Jamaican seasoning or pimento berries, but I used a Jamaican Allspice for the pimento substitute and made a Jamaican seasoning from scratch. I had to get the browning that very night, but it was easy enough to find. Thank you! I'm cooking it right now and looking forward to this delicious-smelling dish!

My dad makes chicken stew similar to this. Roosters typically have tough meat, but when you slow cook it like this the meat just falls apart 😋

We cannot get Scotch Bonnet peppers where I live. Is there a chilli pepper which will be close in flavour? I am not worried about heat. When I have had Scotch Bonnets, they were not too hot for me, so I am looking for a pepper which is similar in flavour.

Niceeee...I know in the past you burn sugar to get the darkness but I just use the browning plus too much sugar not good for us black folks so just an alternative but you do you Chris 💜👍🏽
