Hey Chris thank you Brother! My wife is from Trinidad & I’m from Louisiana & my wife hasn’t acclimated herself with Louisiana cuisine fully. I’ve been come to Trinidad since 1997. My wife was pleasantly surprised with the curry shrimp & potatoes you helped me surprise her when she got off of work. Thank you. You’ve also help me make stew chicken for the first time. I’ve never been a cook. I see your joy in cooking. I love the way you explain the process & hope you incorporated it with what’s going on in your day. Comfort food for what’s going! Im an American living in St. Lucia. My life is busy! I cook on my coal pot and enjoy cooking local dishes for my Lucian husband. Unfortunately I dont always have the time to watch my St.Lucian friends cook (perfect example is using sugar for color) and I learn best from watching so these videos are perfect. Today with this mans help I made fresh shado beni sauce which rocks and fresh green seasoning which I used on fresh barracuda steaks to be cooked on coals with breadfruit. Thanks so much for what you're doing.

@rostant999 Don't recall saying I was Tobago, but the audio can be a bit mumbled at times.. very hard to record, cook and concentrate at times so sometimes my words are not as clear as they should be. Hopefully with the channel getting so popular, I'll be able to afford some help soon. thx for the support.

Live and let live, the best advice I can offer. People cook differently all over the world and believe it or not they grow old that way. Trying to force people do something your way, will never work. Do what you feel comfortable with and let other people do it the way they want.

I am trying to learn to cook.jamaican style stew chicken.Out of all the u-tube demos I've seen.Yours stand out the best..youre not talking crap.Many tutors assume their students are all at the same level and take things for granted but you did not. I know for eg the chicken has to be browned but you properly explained how,You show'd all the cooking stages visually and all your equipment was working for a beginner like me. that was great WELL DOWN. PS I have not tried it yet.

Thanks for posting. I've tried making the Trini version of stew chicken several times and it never came out quite the way I thought it should. Your video helped to clear up a few of the things that I wasn't clear on. Thanks again...can't wait to give it a try this week.

thanks for your work brother. down in Houston and I'm trying to cook more like my great grandparents would've cooked. only thing I added was pimento berries (crushed) and coconut milk. Righteous food! Big up from Houston!

@Triniman50 funny you should mention that. We were on a cruise a few years back and I guess one of the head chefs was from Trinidad and Tobago, so for lunch at one of the many restaurants, we saw Chicken pelau. Our daughters went ballistic as they were craving "home" food. While eating they came across cinnamon sticks in the dish.. added a nice touch to it. Thx for the tip.

Thats because you burnt the sugar. Try putting the sugar in the oil before the pot start smoking, keep all the sugar together to prevent stray sugar from burning and as soon as all the groped up sugar starts to froth it will expand, at that point spread it all over the pot, wait for it to get a bit darker in color but not to much, then put a few pieces of chicken at a time while steering. @BoldnBeautifulMakeup they're very different in appearance and strength of flavor(somewhat) The shado beni is very strong compared to the cilantro. However, cilantro is a good substitute as the flavor is very similar.

he is a great tutor and does explain well, this is a great Caribbean style chicken..... but Jamaican Brownstew is different but check with all Jamaicans friends and get the common steps and you can do great brownstew within a few tries everyone has their input me included.

@ikebanaJc This is a lovely meat dish which goes well with rice, roti (breads), a salad or even mashed potatoes. One of my faves is having a side of boiled ground provisions (yams, dasheen, eddoes, cassava etc)

Mr Chris i just stumbled upon your video and started to watch it. I actually tried the channa in the oven was not bad at all. For the stew chickeb i like to add a bit of cinnamon to it, it gives it a really good taste. Thank you for bringing back all those memories of what i grew up on in Trinidad. Be bless.

I'm Lucian and we do it w/ the sugar too! But we add the potatoes and carrots like the last person said. Real cooks use sugar, they don't use brownin.

Yesss! You can use fresh Savory as a substitute for Spanish Thyme, tastes very similar. Also, I put some carrots and pigeon peas or red beans after the chicken has browned. The beans help to thicken the gravy. OR, take the chicken out after it's cooked and cook some dumplings in the gravy. By the way, I LOVE THAT POT, Chris!

your recipies are tasty and easy to follow. I bet there are similarities to my mother in law's chicken recipie, as she is from Haiti. We have some Puerto Rican restaurants around here, but it is nice to be able to make this type of dish at home for my family.

You both are right, it can be done with or without carrots and/or potatoes.. i guess it's just variation (St. Lucian)
