Becky, I just wanted you to know how much you inspire me. I have a disabling neurologic condition where my body doesn't always want to cooperate, so good days have to be really productive. I gotta get stuff done while I'm able because I don't know when my next bad day will be. Today on a really good day, I made half batch recipes of your salsa verde chicken and chicken soup base that you made with your sweet MIL in an earlier video. And whilst busying myself, I am watching this video and quite literally made Renee's chicken and rice with you for dinner! It feels nice to know I can still have nutritious food prepared ahead of time for my son for when those not so good days inevitably come. Thanks so much for the canning (and dinner) inspiration!

My greatest admiration is how you keep Baby Acre protected from the camera. While I'd love to see how cute he is and how he's growing out of natural curiosity, I'm happy to leave it to imagination. I had to tell you I tried your double wrap on my casseroles for freezing. Two layers of foil and 2 layers of plastic wrap. I froze a stuffed shell bake 3 months ago. Thawed it today...it was as good as the day I made it originally. Great technique Becky. Thanks

I hope you do more of these. I absolutely love them. You planned my entire weeks worth of dinners for me with leftovers I can put in the freezer for another time. The crock pot meals you did, I haven't done all of those yet but, the ones that I did make, I made 2 and put one in the freezer for a freezer meal. I have to have 5 surgeries pretty soon and you don't know how much this helps. Thanks friend.

Cook meats ahead, that always takes the most time. Then freeze in meal portions. Make your own TV dinners. I do that ALL the time. Freezer veges and sides are the bomb. Fruits, clean & prep those too. Planning ahead is your friend during recovery. 😊 Good luck.

I make a similar casserole to the chicken and stuffing but just use thanksgiving leftovers, whatever veggies I have and leftover gravy and stuffing, sometimes I change it up and use leftover mash on the top. Always good.

I make a taco bake with the meat cooked like you did, but put in picante sauce in the meat and put cheddar cheese and Monterey jack cheese then cover with cornbread on top and bake until golden brown. It is also a good casserole to go into the freezer.

Becky, many times we just do not even eat our Parmigiano with pasta. Just a good Italian bread toasted is amazing as well! The bread dipped into the sauce is so delicious as well. With the leftover Italian bread, just make a Parma sandwich

Becky I am Italian. Try making gnocchi with ricotta cheese instead of potatoes. The gnocchi come out much lighter. No doughy at all and much easier.

I watched this video yesterday and used your chicken with the stuffing topping as my starting point. The night before, I had mistakenly taken a pound of ground turkey out of the freezer, so I wanted to use that. I substituted the ground turkey for the chicken, skipped the fresh nutmeg since I didn't have any, and used turkey stuffing mix. My husband thought it was wonderful. I had the leftovers from last night's dish for breakfast today, yum! I cooked it in 2 9x6 dishes so I vacuum-packed the second one this morning and put it in the freezer. I really enjoy your videos and meal ideas.

I used to cook for a family of five but our sons are grown and married and my husband passed away with brain cancer. So it’s just me now. But I stay hungry for the dishes that you cook. Great video! Nice to see some casseroles without canned soups!!!! Also good to see I'm not the only one with indecent heat using a ge profile stove. A little trick for your minced meat. Just push it to the side and the oil will all accumulate on the other side so you either drain it or mop it up.

I love cooking baked chicken rice I did exact same thing, leftover spice on top of my rice with my chicken bouillon and then I add mustard, onions and green Chives so good for the topping my son loves it every time I make it
