This is what I was able to find out: The acid in buttermilk reacts with baking soda to help the batter rise, giving baked goods a light and fluffy texture. The acidic content as well as fat, helps to tenderize the gluten from the flour by breaking down the protein strands. This results in a softer, more tender baked good. Makes sense to me❣️

The soda sweetens the buttermilk and the soda requires an acid to leaven and the buttermilk provides that. The baking powder is a combination of baking soda and cream of tarter. The cream of tarter provides the acid to make the baking powder leaven. Love the science of baking!

I come for everything, especially the conversation. The baking soda keeps the buttermilk from being bitter or sour. It neutralizes it. We call that Amish brown butter icing, even though you didn’t brown the butter first. It browned anyway. It is good icing. We make it and love it. Great on molasses or applesauce cakes. Great video.

Leslie, I just read this online about adding baking soda to buttermilk: Buttermilk is acidic and baking soda is a base. Mix any acidic liquid with baking soda and you get an instantaneous reaction that produces CO2 gas, which causes the bubbles and foaming. This is how baking soda causes muffins and other baked goods to rise.May 23, 2017

This looks amazing! My husband makes a cake called Kentucky sweet cake. It has buttermilk in it and you heat the butter, water and cocoa and add to the flour. And when the cake comes out you have the icing ready which is milk, butter heated in post and add to the confectionery sugar mix fast and pour on the hot cake. Oh my. I’d make that tonight but making a fresh apple cake because I have apples to use. If anyone is interested I can share the recipe!!

When my husband quit smoking back in 1985 he started chewing tooth picks. The eventually he started chewing on the plastic hair picks that you use with brush curlers. He did that until he passed away back in November of 2017

An older relative of mine gave me a recipe for a dark chocolate cake years ago, and the recipe is almost identical to yours down to the use of cocoa powder. The one difference was that she instructed me to heat the water, just like you would for blooming yeast when making bread, then add the cocoa powder to the very warm/hot water and mix to dissolve. She was convinced that this made for a richer chocolate taste, but I have never made it any other way so do not know whether it makes any kind of difference. I have been following this recipe for over 50 years.
