Carrot cake jam from our canning recipe. We'll show you how to make and can your own carrot cake jam, and provide both traditional and rebel recipes for doing so below. This is a great gift jam to share with family and friends for the holidays. Enjoy !
Traditional Carrot Cake Jam Recipe
Yield: 6 half pints
1 cup finely grated peeled carrots
1 1/2 cup finely chopped cored peeled pears
1 3/4 cup chopped pineapple with juice
3 tbs lemon juice
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
6 tbs classic pectin (equal to one box)
6 1/2 cups white sugar
Combine carrots, pears, pineapple with juice, cinnamon, nutmeg, and cloves in a large saucepan and bring to a boil over high heat, stirring frequently. Reduce heat, cover, and simmer gently for 20 minutes, stirring occasionally. Remove from heat. Wisk in pectin. Return to a full rolling boil, stirring frequently. Add sugar all at once, stirring constantly. Bring to a rolling (will not stop even when stirred) boil for one full minute. Remove from heat. Remove foam. Can with 1/2" headspace. Process in a water bath canner. 10 min for 1/2 pints, and 12 minutes for pints.
Tripled Rebel Recipe (what you saw us make)
Yield: 27 half pints
6 cups coarsely grated peeled carrots
6 cups coarse chopped peeled pears
3 20 oz cans of crushed pineapple with juice
9 tbs lemon juice
4 tsp ground cinnamon
1 1/2 tsp ground nutmeg
1 1/2 tsp ground cloves
4 boxes classic pectin
16 cups white sugar
4 1/2 cups brown sugar
Note: In the future, you may well see us can this with a full box of raisins as well if you are interested in trying it before we do.
All other processing instructions would remain the same as in the traditional recipe.

We plan to keep posting some, but keep in mind that we only can what we can use, so we will eventually have the shelves full... ahahaha There are only 2 of us... We can only eat so much...

Its super easy to make... Water batch canning is definitely the method to learn with and a build your skills before pressure canning...

I love carrot cake jam but I’m the only one that eats jam so I haven’t made this in quite a few years but I miss it! I love the idea of adding the brown sugar as well. Also I have never doubled or tripled a jam/jelly recipe because I have always read that it won’t set up. Do you guys triple the recipes for jam often? Thanks for the videos, I love to watch canning videos, they are my favorite!,

We do make larger batches often... Couple tricks... Up the sugar and pectin both a little... Be at a full rolling boil when you add the sugar and get back to a rolling boil as quickly as possible... Can all at once (even if you have to use two canners like we did) so the later batch isn't just sitting around being warmed... And sheet test... Any batch (no matter the size) will set if it passes the sheet test... And if you can't get it to sheet, add more sugar and boil it longer...

Something new to try- never heard of it. Looks good, especially with that brown sugar for greater depth of flavor. Thanks for showing. Love your canning vids. Oh my goodness you two!! I have a stupid smooth top range, but you made this look so good I'm going to set up my turkey fryer burner out back and can some of this out on the back deck!!! I haven't canned in years, instead I freeze and dehydrate. After losing a small freezer with some of my first ever home grown chickens and all my hatch chilies and peaches, I am rethinking that idea!! I am not a fan of pears besides fresh so I may just use up the last of some apples I have on hand that are going a tiny bit soft instead. I also don't like cloves because they remind me of the dentist's office, so I always sub allspice for that. Similar but not quite the same. This jelly looks soooo good guys!!!! TFS!

Those sound like reasonable substitutions, and should not alter the flavor entirely... We have a glass top range, but it is rated for canning... Two canners may have been pushing it, but it has never let us down...

Mine is old and actually came with a warning not to can or do things that require long sustained cooking like a big ol pot of pasta sauce from fresh tomatoes. I was in love with the look of the thing but haven't been a fan ever since other than the ease of cleaning it. It won't stop working! I should can on it anyway in case that would break it, huh? LOL.

LOL... They are half what they were already... I just hate to see anyone get burned... And any time you are heating things with that much sugar, it becomes a real reality...

@@BumbleBeeJunction I've been burned, cut and scarred on several (dozen?) occasions. If I didn't know where the scars were, I wouldn't notice most of them at all. As you already know, sugar really does present a special danger. No flames (usually) just heat, and it sticks to skin pretty well. (I've been careless glazing cinnamon buns before) I hate that. Still, no burn is any fun to get. Sinse you were an Eagle Scout, you were well prepared by the First Aid merit badge to deal with the problem. Being a Corpsman probably helped a little too. 🙄

You betcha.... In fact the original recipe calls for fine grating and fine chopping... but a food processor would not alter the end taste that I know of... Just the look....

Yeah, that bowl of sugar always gets me when we make jam... And then I start thinking about how much is in other stuff too... Its crazy how much sugar we really consume...

Bumble Bee Junction Very true! We have been trying to cut back, and get more of the natural flavors. Some things just don't work without a sweetener. So we use honey in those cases, if we can.

Have you ever canned this in the triple batch before? I heard of people doing double batches and they do not set up. Just wondering because I have always made single batches. It sure looks yummy. Oh the raisins sound good too.

We always can in larger batches... Two things will help to avoid the non setting issues... Have your jam at a rolling boil when the sugar goes in and DO NOT back off on the heat... Getting it back up to temp quickly is one thing you can do... The next is to do what you saw us do here, and can it as a single batch all at once (even if you have to use two canners)... Canning one batch while the other sits and cooks even more before you can get to it makes the two batches structurally different... I have heard that about larger batches as well, but you can find the true culprit most times in the process rather than the size of a batch... Our has already begun to set well....

Yes... You can swap apples for the pears... And in fact, you can swap chunky applesauce for the pineapple as well...

I am so going to be making this. My mouth is watering. I have two questions. Do you think I could add raisins to it also??? Plus I see you have a glass top stove. So do I . Do you worry about putting a canner on it? Just wondered. I'm scared to do that.

We have added raisins since, and it was wonderful... Our glass top was rated for canning... Though I canned for years on one that was not... Its a shatter rating, so just dont drop anything on it... LOL

We use it just like any other jam... It is particularly good warm over vanilla ice cream though... We really enjoy it that way...

Warmed up over vanilla ice cream is where it really shines.... We sometimes just wait to toss the raisins in the back half of the batch for folks that dislike them... We like it either way... LOL

Double batches have a mind of their own, but we have doubled it before and it always thickens as it cools...

I dont really think so... The difference is the amount of molasses in the sugar, so I guess it would depend on how much you like molasses...

They say 2 years, but we have had it last much longer... As long as the lid it sealed, it can stay good for a long time....

I am not sure what kind of pot that is that Tina cooked it down it... We have had that pot for more than 20 years... Its similar to cast iron, but we don't have to clean / oil it like you would cast iron... I did check, and there is no maker name on it... Sorry

I doubled the recipe and used 2 boxes of pectin. Does it thicken when it gets cooler. It’s warm and still not thick

You should be fine, the pectin just needs to cool and gell...

Can you taste the pineapple? Could you replace the pineapple with something. I’m weird and not a fan of pineapple. The look good.

Its a pretty good blend of flavors to where the pineapple is not pronounced... If I were to substitute, I would probably use applesauce... Chunky applesauce might be even better....

Oh it jumped up and bit me faster than I can react... Tina had be stirring and stepped away for just a second... I reached across the top of the pot to get the spoon to take over and it got me... I shook it off immediately and got it under water, but it second degree burned that fast...

Yes, you can use chucked apples in place of the pears... In fact, you can substitute applesauce in place of the pineapple as well... It changes the overall flavor some, but still something awesome tasting....
