I just want to let you know, I did this recipe and you are so right oh my word delicious can not even touch that. So good, I hope you do not mind, I shared this video on suttondaze, on YT. I'm loving all these canning videos! I'm not a big fan of banana's but I like the idea that they are spiced...very cool recipe. I make a harvest butter with pumpkin, apples and pears and it is super yummy!

I would say of the butters, I am partial to plum butter... I think the banana is one of Tina's favorites (she always saves the last can that was canned because it is the darkest as the bananas cook down)....

with all the peels you can make a banana peel tea for potassium for your garden or dry them and put them through your food processor for later in your garden I learned this from the nice lady on Homestead heart

You won't be disappointed... It is REALLY good ! If you want a smoother look you can blend the bananas on down (we like it a little chunky) and cook them to an even dark golden brown... It does not change the flavor really... It is good either way...

Ah, made fresh, you could go full "monkey butter" with nuts and coconut... Some folks even add pineapple... But yes, icecream is the way to go... Tina used this, a fresh banana, some ice cream, and the strawberry jam we canned the other day (all topped with chocolate syrup) to make us some delicious banana splits the other night...

Vera, it does... It is subtle, but if you have not tried it, you might notice the difference. The acid of the apples interacting with the steel can leave a taste (not something you would notice if you have always done it that way) and cause some discoloration (which is unnoticeable once the apples cook down. It is not necessary, but we are the other way, having always eaten it from copper. You can google it for more information, but it does make slight differences.

LOL... I think I got it right in the written recipe in the description, but it is 15 min... We are over 1000 ft, so we were discussing going longer (likely where the 30 min came in) but we ultimately went 20 min (which is what we had written on the recipe card we always use... LOL).... But yes... 15 min... 20 if you are like us... 25 if you are higher still... // It is in one of our other videos... But I will yank it open and reveal the tiny guy behind the curtain... LOL I built two walls and a front that holds the curtatin rod... behind it is two sets of large plastic storage shelves... And they are loaded with the things we use most often... We restock it from all the other places we have stuff stored... LOL

We have made it for years as well, which is why I have no issue with passing the recipe along. We won't post anything we do not know is safe. One of our biggest goals is to be a source of information people can count on despite the conflicting information on the internet...

Just pan to fridge... We were making banana splits that evening with some of the foam from the strawberry jam as well... They turned out really good over ice cream....

We've done it for several years... It lasts the same as any other jam (2 years, but potentially much longer) but we have noticed a bit of a color change (though it does not affect the taste / quality) after about a year...

We are over 1000 so we went on up to 20 min... You could go 25 and not hurt a thing....

How long of a shelf life will this last after you do the water bath

Technically, its good as long as the seal holds, but degrades in looks and nutritional content after 2 years... We make it in small batches that only last us 5 months or so... I have stored it up to a year though...

I have some frozen bananas that are brown. Do you think it's safe to use them in this recipe or start fresh?

I dont think it would hurt as long as they are not rancid... You can boil them down a little harder, and use an immersion blender, and you will have a final product similar to apple butter, but with bananas... I am sure it will be delicious...

I actually believe you could, since they brown and oxidize as part of the cooking process anyways...

It should go 2 years, though we usually like to use it up before 6 months... Just a preference... No real reason...

There is no approved canning method for bananas, but we like to eat ours within 6 months or so, and we've not had any go bad within that time... Some, we have kept up to a year without issue...
