The first soup that I made and it made me fall in love with soups🍜
Also burnt my body while making this soup today with the blender misbehaving 😢
Have you had any blender incidents where the lid is not tight and things have fallen on your face😩
Lesson I learnt today is to allow things to cool before blending (basically patience 😂)

Ingredients :
3 medium carrots
1 onion
1 tbsp chopped ginger
1 tsp turmeric
3 cups of veg stock / chicken stock
salt to taste
1/2 tsp black pepper
1 tbsp oil
Cashew cream :
Soak cashews in water for 6 hours.Blend with some water to make the cream.
Sauté onions in oil till they turn soft.Add ginger and sauté for 2 mins.Add carrots and turmeric ,sauté for 3-5 mins.Add salt and veg stock.Bring it to boil and then simmer for 25 mins.
Allow to cool and blend to make the purée.Add it to the pan.Add black pepper.Adjust salt and simmer for a minute.
Garnish with cashew cream and some herbs 🌿
