Thankyou for this lovely simple recipe, I made it today. It is the first time I have bought & used fresh tumeric, I added sweet potato and roasted that and the carrots first with some of the garlic as I love the taste of roasted veg in soups! Loved the addition of coconut & coriander to serve - It was so delicious I would make again! ~!

Sorry I just finished dinner otherwise that would be it! I use coconut milk only from Silk, or from a fresh coconut. The canned coconut can not even open the can. Is it possible for you to do a video on how to make coconut milk maybe from dried coconut or coconut oil. Just asking because in my area they all use the can. What a great recipe to start our culinary journey in 2017.

In my island we crate the coconut into flakes either using ome made machine turned crater or physical labor grated from a comb tooth sharp like flat piece of metal. Nail it on a flat stick that you can put on a sturdy chair and you sit on it to do the grating. But you can so use the high powered blenders to blend the meat. But first if you can get the coconut flesh out of the shell, then cut in small pieces before adding to vitamix blenders, add a little water and blend away. Then strain and you have your very own fresh pure coconut milk or cream.

I heard that too. And it doesn't need to be a lot of fat, maybe a teaspoon of olive oil or coconut oil for the whole pot.

All you have to do is shred the carrots, clean the Turmeric and Ginger, and decide if you want Jalapeno or any other peppers...its really up to you.

Good recipe, but isn't healthy because of the saute with oil, it's like frying the veggies😅😅 for a healthier way just add the carrots, ginger, turmeric and jalapeno in water and let it slow cook for at least 40 minutes 🤗
