Furikake is a seasoning for rice used in Japanese cuisine. There are many different flavors such as salmon, shiso, egg, vegetable, and more. Furikake is traditionally used over rice but it can also be used as a seasoning for just about any dish that needs a little extra flavor.
This furikake recipe uses the carrot greens or carrot tops for a flavorful and healthy topping for your rice. It is a fun and delicious way to use the carrot greens.

Ingredients
1 bunch carrot greens
1 tbsp olive oil
2 Tbsp mirin
2 Tsp soy sauce

Oh wow! Seriously, your recipes are awesome! We love furikake and tsukudani in this family, however, it’s the MSG that I don’t like, found in the packaged product. The choices without MSG are limited. Thank you so much for posting this! I will definitely make this when my son visits from college during Thanksgiving. Do some research, MSG affects a very small percentage of people. It's as safe as salt to most.

The vegan alternative to 'Furikake' is to leave the bonito out all together, but if you want to make the exact recepie shown in this video vegan, then I suggest that you shred (pulse) 1 cup of cooked Chickpeas, or Beans, or the white part of a Zucchini or an Aubergine, or even Mushrooms or 'Hearts of palms' etc. in a food processor alongside with a nouri-sheet (or kelp powder),. Add a tsp of soysauce and a tbsp of oil (bonito is a fish with dark oily flesh living in salty waters, and it is in the Tuna/Mackrell/Sardin 'family'). Pulse everything in the foodprocessor, and let it all "marinade" for a while, before you use it as a bonito replacement. - Good luck from The Norvégan Chef ;-)

What would you recommend if I can't get hold of carrot tops?

Good question. I suppose you could try it with other leafy foods like radish. But it would have a totally different texture and taste. You can try dry sherry or chicken broth. Thanks for watching!
