Yeah, I kind of figure it's like a mechanic's car, usually they get tired of working on cars so much that when their own breaks down, they just do the cheapest and easiest fix possible. Usually involving a mix of duct tape and WD40. In a way, being a mechanic means you get to really know what counts as "barely functional" in a car, and you just keep the car like that, much like I'd imagine chefs get to know what is "barely safe to eat", and will then make only that for themselves.

The Industrial Revolution and its consequences have been a disaster for the human race. They have greatly increased the life-expectancy of those of us who live in “advanced” countries, but they have destabilized society, have made life unfulfilling, have subjected human beings to indignities, have led to widespread psychological suffering (in the Third World to physical suffering as well) and have inflicted severe damage on the natural world. The continued development of technology will worsen the situation. It will certainly subject human beings to greater indignities and inflict greater damage on the natural world, it will probably lead to greater social disruption and psychological suffering, and it may lead to increased physical suffering even in “advanced” countries.

You forgot the most important thing about plating for professional chefs: You can't ever plate a portion that is big enough to constitute a meal. Plating a single suger cube sized block of basically raw meat, a leaf (cooking it is optional), a teardrop of sauce smeared thin across the plate so it's practically a decoration and a bit of parsley to garnish is considered high dining because less food implies the ingredients are high quality and not that the restaurant wants to charge a triple figure sum for failing to cook the meat and meeting the basic objective of eating: quelling your hunger.
