Have to confess I never considered making onion rings because I thought they'd be too complicated. I'd like to use Vidalias. My husband would want more cayenne and black pepper too. I know its been a year, but just in case others in the future come across this, they need to know that yes, you can use whatever onions you have ~

This looks so delicious! Gonna have to try this wet-style onion ring. Just a side note: I found out the other day that if you are hard boiling eggs to add a teaspoon or so of baking soda to your water, bring to boil, turn off heat, cover and cook 10 to 12 minutes, the egg shell comes right off! I never knew that trick in all my 62 years!!

Yumma Num!!!! Im making these today with the battered frozen fish fillets that we need to eat to make freezer space! Tired of fries & potato puffs. Ill let you know! I've used a recipe similar to this for years and it's the best! This batter also works great with zucchini sticks. Both are so light and crispy. They're also great dipped in Ranch dressing after they're fried. Yum, nothing like a great onion ring!
