A must have when you visit the island of Trinidad and Tobago. Cattle tongue dumpling covered with a flavorful topping of smoked herring. I enjoy this sumptuous meal in all its glory. The smoked herring can be eaten with fry bakes, provisions (yam, dasheen, cassava etc ). Also, green figs. Do try this dish, and lick your fingers when done. Ingredients: (for dumplings)
3 cups All Purpose Flour
2 cups yellow corn meal
1 1/3 cup water
1 tsp salt
1 tsp oil (optional)
water for boiling the dumplings
Ingredients: (for smoke herring)
couple sprigs thyme
1 congo pepper(chopped)
4 cloves crushed garlic
2 ripe red tomatoes sliced
3/4 cup chopped green onion
1 small onion (chopped)
1 lb boneless salted smoked
2 1/2 tbsp cooking oil
2 oz water
