INGREDIENTS: Blender sauce: Thumb of ginger Clove garlic Small onion Chilli (deseeded optional) 1.5tbsp curry powder 1 tbsp cinnamon cloves star anise 1/2 tsp black pepper 1 tsp salt Juice of 1 lime 1 tsp maple syrup 2tbsp tamari/ soy sauce 400ml veg stock 1 tin coconut milk Veg: 100g mushrooms 1 leek sliced 1 pumpkin chopped 6 vegan sausages Tip blender sauce over veg on one tray 1 cauliflower sliced into steaks onto separate tray season with salt Tamari oil Bake for 35mins until veg soft Top curried veg with cauliflower steaks Enjoy & GetGutHealthy with beautiful plant based recipes!!

I make similar bakes all the time. I cut the vegetables first that need the longest to cook and put them in the oven as soon as I‘ve prepared them. The sauce comes last. By then I know how wet to make it. Mushrooms or tomatoes lose a lot of water into the baking tray. This is great for meal prepping. Your recipe with the separate cauliflower steaks makes it very gourmet!

Looks delicious! Great Idea to make a curry bake that basically makes itself after a bit of prep. I will have less spare time on hand starting thursday so minimizing time in the kitchen to spend more with my wife and our cat is on the agenda, so dinners like this are a great idea!

I made this today but changed up most of the veggies for what I had on hand: radishes, cucumber, sweet potato & asparagus. Instead of veggie sausages I cubed up a block of tofu. I roasted the cauliflower of course to place on top. What a great meal! Very tasty and satisfying.

This looks so good. I love this time of year and I always go a little squash happy with all the fall squash and pumpkin. I think one of those blue pumpkins would be great in this. The blue ones are the best tasting ones in my opinion.

How about coconut aminos? My friend is allergic to soy and she uses it. Coconut aminos is a salty, savory seasoning sauce made from the fermented sap of coconut palm and sea salt. It might be a good substitute 🙂

We tried this tonight and the only thing I’d recommend is roasting the cauliflower in the oven and make the curry in a pot over the stove. It was far too runny to ‘bake’ in the oven and sweet potato took over an hour to cook! Great recipe though 🌱👌🏽

The ingredients in commercial curry powders can vary quite a bit. I make my own. Just Google it for recipes. Very easy.

Please go back to the old style! One of your big advantages over other vegan cooking channels is your awesome personalities. They do not shine through at all in these new videos. Other youtubers have to have fancy editing to make their videos stand out and be interesting but YOU TOGETHER are what make your videos interesting.

I disagree, I thought you guys gave off lots of positive energy and confidence. There was a brilliant synergy between the two of you that was really appealing. I found the spikiness between you two at times in other videos off-putting. I prefer this format. Just one gripe about the recipe itself. I'm Asian and it drives me a little crazy when I see 'curry powder' being used In recipes cos it is not authentic at all ! Also, please be more precise about the amounts and names of the spices used. I suppose your aim here was to make it quick and convenient to put together so that makes sense in the context. I will try it your way. Never realised you could leave the skin on when cooking pumpkins, is it edible too after cooking ? Anyway, thank you for an interesting recipe yet again ! Will try it with squash or sweet potato as well as pumpkin later on this month. Keep up the great work and thank you for kicking off Autumn for us with some seasonal veg ! Good luck going forward with the new format.
