食譜/ Recipe (Eng) 食譜: 麵包100克*4 (可根據香腸大小調整) 烤盤尺寸37.5*28.5釐米 麵團: 中筋麵粉 250克 (或高筋麵粉) 幹酵母3克 鹽2.5克 室溫水170克 (高筋麵粉+20克) 香腸 表面醬: 軟化黃油30克 蒜蓉10克 鹽1克 芝士粉5克 表面: 芝士粉 20~30克 烘焙溫度: 180°C (或356°F) 25~28分鐘 Tips: 1、麵團可以根據香腸大小切割,不一定按照原食譜。 我采用的香腸每根重量80克。如果您采用的香腸比較小,可以麵團切割小一些。 2、如果用高筋麵粉來製作麵包,建議水量添加20~30克。 3、發酵時間參考 室溫30°C 第一次發酵:60分鐘 第二次發酵:55分鐘 Recipe: Dough:100g*4 (可根據香腸大小調整) Tray Size:37.5*28.5cm Dough: All purpose flour 250g (Or bread flour ) Instant dried yeast 3g Salt 2.5g Room temperature water 170g *(bread flour +water 20g) Sausage *4 (Optional) Surface sauce : Softened unsalted butter 30g Garlic 10g Salt 1g Grated cheese powder 5g Surface : Grated cheese powder 20~30g Baking temperature: 180°C (or 356°F) 25~28minutes Tips: 1. The dough can be cut according to the size of the sausage, not necessarily according to the original recipe. The sausages I use each weigh 80 grams. If your sausage is smaller, you can cut the dough smaller. 2. If high-gluten flour is used to make bread, it is recommended to add 20-30 grams of water. 3. Hi, don’t need to add butter to dough when knitting it? Also why some teachers use warm water, cold water, room temperature water. When to use what kind of water😅

Hi, this is a French dough, so you don’t need add butter. For the water, usually I use room temperature water, but usually use cold water when you need to control the temperature of the dough. Normally for family baking, room temperature will work because it’s good for the yeast to be active. 🥰🥰🌹🌹

Do you mean if I’m using 250g bread flour, total water 190g right? Can I use only grated Parmesan cheese powder (which available here) to do the coating? Will it easily get burned when baked?

Hello, yes, 250 grams of bread flour is correct with 190 grams of water. When the cheese powder is sprayed with water, the bread will have a smooth surface after baking.

May i know do we bake in the middle rack or lowest rack of oven? Thanks

Hi, my oven is 40L, and I’m using middle-lower rack, because my baking tray is thin. If I’m using a thick tray, I’ll go lowest rack. The location depends on the size of your oven, thickness of the baking tray and whether if your top heat or bottom is stronger. If the top and bottom heat is equal, it’s suggested to put on the middle-lower rack.🤗🤗🌷🌷thank you for liking!
