Thank you for this presentation! I have celiac disease and the hardest part about it is avoiding cross-contamination. I have gotten sick from foods labeled “gluten free” because even though it didn’t have any wheat, barley, or rye ingredients, one of the ingredients was transported to the factory in a truck that was also used to transport barley. That’s how sensitive we can be, it’s such a pain! Thank you for educating our next generation of doctors to be compassionate to people with this disease.
