One thought on this test is your chainmail is the split ring type. While easier to make, most historical chain mail is riveted, which means 4 solid rings connected to a riveted ring. It would be interesting to see how the riveted plastic rings would hold up. Part of the failures is the split rings spreading at the split.

What materials would the armour use? The sabots are stopped by plastic and clay, so everything would feel like overkill against the sabots

They would need a metal apfsds (like aluminum or steel, something easy to machine with a lathe) and a MUCH better propellant for the actual sabot to be used properly. Apfsds is long so that it has as much mass and material to use up all of its energy trying to get through. If you are looking for basic penetration tests with a miniature version of a sabot used in the military, these don’t act like those at all since these are all 3d printed and are probably not fired out of some sort of gun, probably an air cannon.

The chainmail would be slightly more effective and accurate if you melted the ends of the links to "weld" them together. Thus rings would be less prone to just opening up when hit by a projectile. Historical chain mail was actually riveted but I am unsure if you could easily replicate that. Alternatively use a piece of filament and a heat source as a sort of jank plastic soldering iron.
