I have never found the need or desire for a pressure cooker or a branded Instant Pot. But after three years of cooking whole food plant exclusive, I am drawn to the load-and-leave-it methodology. I am usually at the stove several nights in a row. I do make big batches of food when I cook for planned-overs and lunches. Well, the Instant Pot is on its way from my Amazon order last night. I would love to see a part 2!

My favorite tip for cooking with tomatos in an instant pot is to put them last on top of everything else because it will prevent burning. Of course that's if you have problems with tomatos getting burnt.
