I made Mujadara for the first time after being spoilt by our friends the last time we visited. They made the most delicious mujadara for us and our whole family was hooked! This is a simple rice and lentil dish that's made with caramelized onions, it's frugal, simple and so tasty. Wish me luck making it for the first time with quinoa!

I live in a very Middle Eastern neighborhood. The onions that come with mujadara here are deeply caramelized (as in, as brown as the lentils!) but not crisp. They make the whole dish! I first learned to make this from a Lebanese recipe where the author's mother would put it in a pita and serve it hot, topped with a cold salad made with lettuce, tomatoes, mint and a simple, garlicky vinaigrette and feta, which is easily mimicked with a vegan version. Still my favorite way to eat it.

You might be interested in similar dish from Egypt called koshari. It has the lentils, rice, and onions plus pasta, chickpeas, and a spicy tomato sauce. The spicy tomato sauce adds a lot of extra flavor. Sometimes we skip the pasta and chickpeas and just add the spicy tomato sauce to our mujadara.

I had something like this in Saudi Arabia. It was one of the most delicious meals I have ever eaten. I have always wanted to recreate it at home. My only suggestion is don't mix the onions in with everything. What I recall is that the onions were crispy, and on top, as well as all of the other ingredients. They almost served as toppings. So you could add the amount of pasta or chickpeas or onions to suite your particular taste. The base of course was a spiced and aromatic rice and lentils blend. I cook for one, sometimes two 99% semi-vegetarians (one of them is myself, the other is my husband), and I just made a pot of black eyed peas. Wonder if I could use those as the 'legumes' in this dish. I think I have the other ingredients.

Maybe next time as you've said cooked the Lentils and the Quinoa together then add the well seasoned carbalised onions with some slices of ripe plantains to sweeten the taste. I'm still going to make it because I like the meal idea. Just more seasoning to taste. Trey had seconds so it couldn't be all that bad.😊❤🇯🇲

Poor people food but quinoa is expensive :D that was so funny. It is so relatable how sometimes food I cook turns out worse than expected. Has happened to me so many times!

Great job trying this but I recommend to make this with white basmati rice and the green lentils cook part way. Season the rice when you cook with a little tiny bit of cinnamon cumin salt. Then I’m Egypt they make a red sauce that goes over this. And if you really want the taste you have to make the crispy onions really crispy and a lot of salt and put them on top. So when you cook the lentils part way then you finish with seasonings cumin small amount of coriander and salt and pepper . So then when serving you have the rice on the plate first, then the lentils, then the red sauce and topped with the very crispy onions and also a garlic yogurt sauce salted too can go with this. Give Thai recipe round two and try some of my suggestions. Koshary which is just the same as the mujadarra is one of my favorite things but Egypt does it a bit different and as you can see dressing it up more doing each component separate pull altogether in a grand way. Poor mama food can still look beautiful. But also try the red sauce and yogurt on top yum

I honestly have never heard of this dish but I do make pilaf which combines two grains or starches commonly orzo and rice, onion, broth, parsley -delicious.

I just made it with rice and then put fried onions and mushrooms on top , also added some chilli and garlic did not put water in , just olive oil and was so nice will be making it regularly now

🌱🕊💚 Looks yummy & comforting. I love quinoa, so I bet I’d love your version. You could try millet instead of rice if you’re trying to avoid a lot of rice. Love millet too. Try it. I think anything is great with ONIONS!!! Mmm. 🧅🧅🧅🧅 I’m salt free so I would omit the salt. 👋

I could’ve used garlic! The only thing is garlic is a blood thinner, I have a blood condition and we don’t use too much garlic in cooking. But some crispy garlic would work wonders in this!!

I just had to laugh a little on this one I love that you honest as well I worked in Florida at Abbey's health nutrition in Tampa Florida and worked with a woman named miatta and she was Lebanese and unfortunately I can honestly say the way you did it was nowhere near of what she taught me it is very simple and it's very cheap but I will say I used to make it for my son and you have to use at least 3 inches of Olive oil that's good and you let the onions usually only 4 lodge onions max she would use for the cafe 1 and we made a huge batch It was definitely an art but it was so good you have to go and cook And the rice definitely separate it does matter it's hilarious fact and you have to use a lot of oil it doesn't come out right if you don't believe me i'd've tried and a ton more of Kuman and salt but it's how you do it in layers that really makes the difference it infuses the cumin when you dump it on top of the mixture I wish I could show you how to do it in person and you would never get it wrong again and it's super cheap and my son loved it and he was the most picky eater known to Mankind I hope somebody on here that's Lebanese can actually show you I'm nowhere near your area otherwise I'd show you how to do it but definitely don't use kid You have to use brown rice on this one best of luck and KZbin to find the authentic 1 but I love you guys anyhow you're real and that makes a real difference in veganism

I also tried to make our version with quinoa too so that’s different. Either way the one our friend made was so so good!!

This is a yummy recipe. Will make with quinoa. I went to your Eden Body Care website and was so interested in kefir and your experience with diabetes. I have type 2 and have been drinking kombucha. Never had kefir...do you drink water or milk kefir. Is it easy to make? It sounds easier than kombucha.

We used to love making kefir it’s like a thick yoghurt but we no longer make it. Have you had experience with other fermented foods? Kombucha is good, we’ve never read any studies showing that kombucha has anything linked to helping with diabetes however there is a lot of anecdotal testimonies in kefir and as you’ve seen it’s definitely helped with my gestational diabetes. It is easier to make compared to kombucha, you take the kefir grains, strain it then add it to milk and let it ferment overnight. You have to make sure you use unpasteurized milk when making kefir. It is something you need to do daily but there are ways to keep it in the fridge when you want to take a break. We have not made water kefir before and don’t make kefir anymore however we want to convert our grains to a plant based milk. We’re just not sure if the milk proteins cross over. There was a case study showing that a combination of kefir, goat milk and soy milk served as an anti diabetic agent to help manage type 2 diabetes. If you’re interested in a source to buy kefir grains from we can refer you to the person we purchase ours from who is Donna from Cultured Food Life. She has podcasts and lots of info on fermented foods/cultured foods!

@@thehaipath Thanks for all the info. Never made any fermented foods. I like saurkraut, and of course kombucha. I have read that water kefir is the best for diabetes. So I will start there. Thanks for the contact person. Using the grains and sugar seems very easy.
