This dish was an absolute banger! I added some bell peppers, a fresh tomato and a leek instead of the green onions. Will definitely be added to the rotation ✌🏻

Theres a variation made in South Lebanon called mujadarra hamra or red mujaddara and its made with bulgur wheat instead of rice. Its so delicious and tastes slightly more earthy and has even more protein. Filling and a great meal for our whole family during the Orthodox fast.

I make it with bulgur also. I recently discovered freekeh at my middle eastern grocery and I’m thinking of trying it instead next time I make it. Apparently freekeh is more nutritious than quinoa.

@quietvalley9198 that's awesome. Freekeh is typically used in a sort of pilaf style in Lebanese cuisine, but is so delicious I'm sure it would be good with lentils. Let me know how it turns out!

I have cooked this multiple times now it is so freaking delish. One day I forgot ginger but I had diced fennel in the freezer and my brain was like this might not be great but it ended up being chefs kiss. I did a half recipe with half cup of diced fennel bulb that I added a few minutes before the garlic and spices. Next time I would do it with a whole cup. Great work on getting these flavors so balanced! It makes it so much easier to play around with.

I personally would omit the vegetable stock & just use water as the recipe has enough ingredients to create a lovely stock of its own.

This looks amazing and super nutritious with all the onions and spices! I appreciate you mentioning that the tomato isn't necessary, as I am sensitive to it. Might try substituting squash puree and a bit of lemon juice for acid, as I've done that to make up for the tomato in chili before. I love your videos! The food ASMR, baby whisk adventures, story time and explanations of the how and why is an amazing combination! Plus the way you demonstrate prep work has given me ideas on how to improve my knife skills and work more efficiently in my small kitchen. Thank you!

Just love Lebanese food! So glad I discovered it when I started traveling ! 15 years ago, Lebanese food wasn’t that well known in my country Norway ! But once people get to taste it, they can’t stop, it beats Italian and French food by far! So tasty and healthy !

WELL THANKS.... For reminding me about that 5 gallon bucket of dried lentils and split green peas I have in the pantry; purchased at the hight of a pandemic when my brain was spiraling. Lentils and split green pea were two items I would prep for the week and just keep in the fridge. Both so versatile to use as ingredients. And tomato... (the in season guys) so good to use fresh in dishes like this or to slice and eat simply with olive oil, salt, pepper and some fresh basil!!!! And the, "IS THAT IT?" while Mom turns and walks away... So much is about perspective. The number of times I heard Mom "calling on the Lord" in regards to the chaos happening around her; Priceless! Besides.. The flooded basement just revealed the hidden sandwiches under the bed! BAHAHAHAHAHAHA! Stay amazing and keep up the great work! PEACCCCCCCCE!

Something I love doing for my recipes lately is to crush my garlic and add them to a small pot and simmer on a low heat for about 30-45 minutes while the rest of the food is cooking. Then I add the garlic in for a boost of flavour. Allowing the garlic to simmer in oil by itself allows the oil to really soak up the garlic flavour.

Good recipe,in the middle east we do mjadara alot, First use something like calrose, any starchy rice really. Use olive oil to fry the onions and add to the finished dish before serving Garlic is not optional, add it just before adding the water Soak the lentils to shorten the cooking time and then you can cook it the same time as the rice

I have recently discovered Turkish Lentils & Brown Rice served with golden onions on top. OMGOODNESS so good. That’s how I make brown rice now. So much to learn from other cultures isn’t there? I even love this combination cold as a salad with olive oil, cucumber, broccoli and any other veg in my fridge….and a generous handful of cilantro of course! Love your food combinations and suggestions.

i spent my life eating Moujadara (I used to hate it when I was young) haha nothing beats it with a fresh salad it's a plate you can eat hot or cold depending on your taste.

When I tell this dish was smackalicious!! I made this rice for my high school brothers who always need meat with their meal but they said they could eat this dish by itself. That is huge in my book. It had the whole house smelling like a 5 star restaurant. I need to make this again.

If you decide to use turmeric make sure to buy the whole root and cut it up like you did the ginger. Powder turmeric is often dyed yellow artificially

Well this is absolutely delicious, I added green seasoning instead of the chili paste and added half of the onions to a cast iron skillet to get crispy for toppings. The squeeze of lemon afterwards adds a little brightness to the dish.

A staple in an Indian household! This recipe preparation looks absolutely wonderful! Although we prepare the lentils and rice separately, the end result seems to be very similar! It is also very considerate of you to exclude any ingredient that doesn't suit somebody. This is a perfect recipe for anybody testing the waters of veganism as a more permanent thing. Mmm, I love mujadara! I particularly adore it with plain yoghurt or slightly diluted sour cream- both vegan of course. The coolness and slight sourness of the topping really complements the dish. Thanks for posting this fabulous, cheap but very nutritious meal!

I enjoyed your take on this recipe and would suggest instead of salt in the brine, which is fine, try baking soda. I find it works a little better and you might want to explore the many other uses of baking soda. Example, mixture of it and water to make a slurry and mix it in with ground meat, like beef. It will brown so much more. thanks

I cooked this last night for my family, and I would recommend upping the stock amount by a cup or so. The mujadara dried out well before the lentils were cooked in my case.

HOW DID I MESS THIS UP SOOOOO BADLY ???!!!! It was still tasty but I had more of a mush! My rice stuck to the bottom of the pot and burned which led me to stir which led me to cry. Note, I used the SAME pot/pan that he used!!! This is why my boyfriend does the cooking and I happily wash the dishes and clean up.

Mujadara is an amazing meal. I am happy to have come across this recipe. I've been wanting to make it since the restaurant where I first tasted it closed.

Have you ever made a veganTinga? This reminded me of it. I'll be trying this, sans the ginger as I'm allergic to it. Tinga: The same boatload of onions you just used , only 10 - 15 min dance in the pan Garlic 1 large head cauliflower (replaces chicken) bite size chop or sliced 1 chpotle pepper from can in adobo sauce ( i use powdered sometimes) add more if desired Stewed or diced tomatoes with the juice Some tomato paste Fair drizzle of maple syrup (I add 1/3 cup of black lentils) Pepper and salt to taste Stew together, let liquid thicken When all is cooked, load onto a toastada round. Top with thick cashew cream, avocado and fresh cilantro ( i make avocado cilantro sauce ) (No Ginger in this one Andrew) 🙋‍♀️💕

Delicious and healthy but a lot of prep….my sister and I love your channel.I would make half the next time as I live alone. I swim mid day and I am always hungry afterwards. This dish gives me a reason to come home and enjoy a bowl with a nice hot cup of green tea. I am 83 and still cooking healthy😃😃

just made this and it's delicious! i didn't have tomato sauce or chili garlic sauce so i subbed fresh tomatoes and sriracha. also added in tvp for extra protein and some broccoli. great vehicle for vegetables on their way out, will definitely make again

In Iran, we call this "Adas Polo" aka lentils and rice. The base is the same but the other stuff is different.

Made it myself, strikes me as very similar to Spanish rice. Now, I know the Iberian peninsula is in Spain and had a large Middle Eastern population back in the day so perhaps some culinary osmosis happened there.

Τhis is seriously amazing! (In central Anatolia almost the same meal is cooked with home made pasta, sometimes with bulgur and sometimes with rice) Super delicious! Epic!

I made this Nov 5th. Minus the bay leaves I followed it exactly. This is really GOOD, but man caramelizing onions is time consuming. I ate it with a side of broccoli. 🤟🏽

Andrew can you make a meal to have when one feels very bloated and burpy lol I mean yes there are things like tea, walks, medicine and exercise but you also need to eat in those days 😅 love your work, thanks ❤

You can actually speed up the camarellizing of the onions without compromising the result! This is the trick: Add a fair bit of water to your onions and pop the lid on, cook for a few mins until the onions are nicely wilted. Then proceed as usual - lid off, let water evaporate, let the bottom of the pan get some browning and (SECOND TRICK) add a spoonfull of water every once in a while to incorporate the browning back into the onions. With those two techniques I come to the 45 mins result in just about 25 mins. Thank you for your videos, I really like the editing as well as the content and your presentation!

Happy to hear you can also cook the onions for a shorter amount of time on higher heat. Realy want to try this recipe at my parents house but they would not be happy with me leaving the gas on for 45 minutes hahaha
