Hearty homestyle cheeseburger soup cooks quickly, thanks to the Instant Pot.
1lbs. ground beef
1/2 onion, chopped
2 carrots , sliced or grated (about 3/4C)
2 stalks celery
4 C beef broth
2 medium potatoes, small cubed
1/2 tsp basil
1/4 tsp oregano
salt and pepper
1 C milk
1/4 C flour
1/4 C sour cream
2 C shredded cheese
Select saute on the instant pot, and brown beef and onion. Drain grease if there is any. Hit cancel and then press pressure cook. Add diced carrot, potato and celery. Add spices and beef broth. Put lid on and cook on high pressure for 3 minutes. Then let the pot do a 5 minute natural release and then release the rest of the pressure. Open lid and add milk flour and sour cream- site to combine and then add shredded cheese. As the soup cools it will thicken. Serve with a salad and bread. Makes great leftovers
CROCKPOT :
Place potatoes, onions, carrots, celery, basil and oregano in the crockpot. Pour beef broth over veggies. Cover and cook on low for 4-5 hours. About 45 minutes before serving brown ground beef in skillet and add to crockpot. Than add the flour, milk, sour cream mixture and let it cook in crockpot for 20 minutes. Before serving add the 2 C shredded cheese and stir well to combine.
