I just made this vegan. I followed your recipe exactly but instead of using beef or other meat I used vegan crumbles and vegan mozzarella; and I added mushrooms. It is delicious. Thanks for the quick and simple meal. I took a break from studying and made this in about 20-30 minutes. Thanks

I made this last night. My husband is a very picky eater as well and he ate it, spinach and all. I've been unable to cook much over the last few years due to chronic pain, but I'm finally feeling a bit better and even though I'm still weak, I'm trying to get back to cooking and rebuilding my strength. So, thank you so much for a simple and delicious recipe that I was able to do in about an hour. (When the pain starts I have to sit down, so everything takes me longer to do.) WOW! I tried this but for the cheese layer in the middle I used blue cheese as I had some I needed to get rid of then used mozzarella on the top! Your family are so lucky to have you in the kitchen!

I used to do this one around 35 years ago when my kids were little except without the baby spinach .. I grated a carrot finely into it 👍 Great for a hungry growing family ! Maybe a beef cube or two ?
