There's not really a fast way to make beef Wellington - that mistake probably set the kitchen back an hour since they need to bake for 40+ minutes. I'm assuming that they pre-sear and wrap them for the sake of time in a commercial kitchen, but there's no real way to expedite the bake without ruining either the lamb or the pastry - fairly major goof.

Even though these cooks make some bad mistakes, and it does set the team back every time when something like this happens, I still respect every last one of these cooks who give it there all. Not the cooks who half ass it sometimes. One thing I'd wish I could see is a timer counting how long it takes them to perform the same dish multiple times. Dinner is typically served from 5-8pm and ends at 9 in extenuating circumstances therefore even with fully prepared dishes one dish mathematically cannot take more than 5-7 minutes to serve 2-400 in 3-4 hours if you make big portions or multiple as demonstrated on the shoe

Even if he wasn’t there, do they really think the customers won’t notice?
