I love Jose Andres and his passion for cooking. I remember Anthony Bourdain's episode with Jose Andres. He kinda reminds me of a Spanish Paul Prudhomme, same passion, same enthusiasm in explaining things to you.

I can't cook a turkey for my life. My traditional Thanksgiving entree is a Raspberry Duck Breast. I serve it with a rainbow root vegetable tart, a mushroom & leek tart, & an asparagus souffle'. Scump-deli-ump-scious!

When I was stationed at a base in the southwest Pacific we ate red snapper we caught on our time off-duty. We got to feeling really funky within 30 minutes. The natives told us later that they call the funk.... beepbeep. The snapper contained neurotoxins stored in the flesh. The fish eat fire coral polyps which contain the toxin. If a you injest too much red snapper in that area, you die. It doesn't take much. Funky. BTW, Red wine isn't a cure.

Makes me wish that more cooks were paid more and treated better. Maybe more cooks out there would give a damn about what they're doing instead of feeling embittered and used. I'm saying this as a former cook who went into bookkeeping because my last employer wanted cheaper labor, even though I liked my job and coworkers.

I still remember years ago when he had his cooking show here in Spanish TV. I never liked him because he wasn't natural. He still isn't natural 😆 But his humanitarian labour compensates it all 🥰 Aún me acuerdo hace años cuando tenía su programa en tv aquí en España. Nunca me gustó porque no me parecía natural. Sigue sin serlo 😅 Pero su labor humanitaria lo compensa todo 🥰

Especially since Thanksgiving is a myth, never actually happened, but rather than making new European traditions, we need to celebrate the Indigenous of this country, & lucky for us, there are different traditions from Native Americans in different places because they had a wide reaching culture.

Ok, seriously now. I usually love this guy, but how can it be accounted for a cooking recipe (or even just a tip) from a chef?? The only items in this recipe are: add lots of salt, cook in oven...

I do not get, why it is almost always male chefs, who are getting on TV. It is like it is a sensation that some men can cook. Women chefs are hardly never on TV. It is blatant discrimination.

Chef Andres provides an incredible service to people victimized by disaster. But the paradox of him utilizing animal agriculture to feed these people when the nature of these catastrophies is in large part due to the horrible climate implications of the animal agriculture system should not be lost on anyone. Further, to use the bodies of one species to feed another is a moral failure. Among the thousands of people Andres feeds it is a guarantee that among them are terrible people. But among the thousands of animals victimized and murdered to feed those people there's not a single one of them who treated a single human with overt cruelty. If Andres wants to do something really spectacular he'll adopt a plant-based approach to feeding people.
