What you described is a twice baked or fully loaded potato, hardly anything creative about that. I don't think baked potato was a good idea for this "make it gourmet" series. Whereas a dish like a mac and cheese lends itself very well to be gourmet'd up, like adding pancetta, using exotic cheeses and spicing, different pasta, etc, baked potato has only a vey limited amount of things you can do woth a dish that has a whopping 2 main ingredients and a very basic presentation, which is essentially a potato cooked as is

We got a fancy classical trained French Chef and he's using the tried and true cheapo cheese thingy he got, probably in college, ten+ years ago at the "shop-a-lot" down the street for $5. It's just a delightful reminder that they've always intended for these recipes to be accessible to regular people at home. Though I still wanna know what the American equivalent of a banger is lol.
@stiffk6662 жыл бұрын
Equivalent in which way? Did I miss a joke in there or was it serious ? It's not a particular type of sausage so there's no exact equivalent. Bangers and mash isn't really a thing over here unless you get it in a themed pub or something. I think part of the future videos should include the thought process before the attempt and should include all the guys because then we can see the insane gourmet reinvention idea from Ben before the normals *hopefully* interject and then ground the idea and they all come up with a compromise. OR present and cook BOTH the insane gourmet reinvention AND the grounded "better than normal" version...

I want to see the normals - without the help of the food team - design their own idea for taking a basic idea and making it "gourmet". Grilled Cheese (cheese toastie?) would be fun to see, for example. Then, Ben, with the food team, shows a way or two professional chefs would "gourmet" the same idea. I would even love to see the "behind the scenes" design and testing process for each normal and then the same with Ben. To see a true comparison between the chef and normals.

This reminds me of Rie's series called "make it fancy" where she takes simple things or like junk food, (Cheetos, Lunchables, etc) and repurposes it to turn it into something fancy. Rather than just making a fancy version of the original dish.
@isabellatheresemateo39612 жыл бұрын
I think that is the format that they want Ben to follow, but to me that doesn't sound that interesting anymore, I find Ben's output to be far more interesting than innovating a simple dish and we get more refined recipes out of the channel... And just to further elaborate, I don't think there is any bridge between Gourmet and Convenient, which was what others are also looking for in these kind of videos. Its not supposed to be as convenient as the original dish!! hmmppp

Great video! Couple remarks on the fondue (as a swiss person). Well done. Rubbing the pan with garlic, wine, cheese and starch are all correct. Of course the combination of gruyère and cheddar is not common. But generally I would say use what you like. However I have never heared of anybody using emmental in a fondue. Bog-standard is 50/50 gruyère and vacherin. Also as you were eating I could not see a flame underneath the caquelon (the fondue pan). Your fondue will harden quite fast if you do not have at least a litte flame underneath and if it cools to much it can be hard to heat up again without splitting (at least in my experience). And if you have a flame underneath keep stirring. This is the reason we use these long fondue forks to stirr the bread continuously. if you just dip you will burn the bottom of the caquelon and cleaning it is annoying af.
@Retro_Rainer2 жыл бұрын
take a closer look at around 9:20. there's clearly some sort of heat underneath the cheesy goodness, otherwise it wouldn't be bubbling ;)
@MaZEEZaM2 жыл бұрын
I also noted how the fondue was boiling and was thinking perhaps they have a tea candle under the dish which you will also note is raised above the table EDIT, @9:38 you can clearly see the burner the pots sitting on. Regarding the cheese choice, consider that their audience is worldwide, they need to pick cheese that is obviously suitable but is recognisable and can be easily bought all around the world. We have a wide range of cheeses in supermarkets here in Australia, but I've never even heard of vacherin cheese and I doubt I'm alone. Comte cheese is an option though not expensive and less easy to get, requires a supermarket with a decent range. More often gruyere and cheddar are used or brie.
@sinaain2 жыл бұрын
@@MaZEEZaM yes, but he said that USUALLY it would be Emmentaler and that’s just plain wrong. He could have said the cheese that is usually used is quite hard to get outside of Switzerland and anyway to keep it closer to the baked potato Inspiration cheddar is appropriate or something like that. But to suggest that Emmentaler is used usually or often is just incorrect.
@chillato02 жыл бұрын
@@sinaain Exactly. Otherwise I absolutely agree that it is a good idea to use local cheese you like. It may not be traditional but that should not matter if you like it (and want to cut down on Emissions caused by transport). Also @MaZEEZaM the burner is surely on when they took the sexies. But @9:38 it really does not bubble and I can not see any flame, the burner looks like it may even have a lid on. But true I can not be absolutely sure. I just meant to say if you make the cheesy goodness yourself please do keep it on the heat and keep stirring.

I think if we expect Ben to make a gourmet dish using mostly just the dish he is given, we need to give him more to work with than a very simple food item like cheese+baked potatoes or just chicken wings. Give Ben several full microwave meals or a Hot Pockets variety pack or a full meal from a fast food restaurant. That way he has more ingredients to work, but force him to incorporate EVERY food item in the dish. If it has mashed potatoes, peas, a brown sauce and a brownie, ALL of it better be somewhere. (Drinks included). It will be both a help and a challenge.
@mariechen02822 жыл бұрын
You guys have been mentioning 'the food time' quite a lot recently. Could you maybe introduce them or make a whole video about them?
