@@shitlista4283 Truth be told, unless you're using pork from an old school legacy line, like Berkshire hogs, it's tough to get a pork chop juicy these days because they don't have enough intramuscular fat. As the fictional Richard Gilmore once said, "Less fat equals less flavor. Yet another example of the great advances man has made, flavorless pork. Hurrah for the opposable thumbs."

Right, hear me out... What about a proper midweek challenge? After a long day of shooting, spring it on the chefs that they need to cook a meal in 20 minutes. The rest of the team play the role of chaotic children, getting in the way and making weird requests. All with just generic food you'd have in the fridge.

I believe that showing people, especially young adults, that you can prepare good food without breaking the bank, is a very important public service. However, NOTHING beats Jamie coming up w/money for snacking ham!! Love that man and all his silliness.

I just love how even the chefs constantly use some of the gadget reviewed stuff. I can't count how many times I have seen that spoon spatula get used per episode. I wonder if they will ever do any reviews on some of the gadgets now that they have used them several times and say if its worth the money.

Yes! That would be interesting. So many of these sorts of things break very quickly, and you never get reviews months or years after the fact. We need to be buying with longevity in mind as much as usefulness.

James likes to give you the maximum flavour from the best ingredients you can buy for the money you have available. If you have a tenner to spend on tea, why not buy the best you can? As an aside, I was planning on toasting some slivered almonds to go on my salad tonight; I might have to change some of my dinner plans and make something else to put almonds on...

I dont think James got enough credit on camera. His dish looked fire and the romesco on the board bit...I learned so freaking much from this episode. PLEASE do more of these, it's so informative and inspiring, especially these days when we need to be a bit more cost conscious I love seeing ways to save a few bucks without sacrificing flavor. My dad is a chef and basically does what Ben did to all our tea towels. My mum swears by pre-treating the tea towels with a mixture of stain remover and colour safe oxygen-based bleach. Chuck it in hot water, let it soak and wash normally and all your kitchen stains should come out 😊 Love you guys! ❤️ Ps: just wondering why in world Ben was using a metal fork to stir in a frying pan (at around 7:30 min) 🙃

Small bit of feedback: if one of the cooks says "in a hot/medium" oven, etc, could you put a quick text overlay of the temperature that would be? Eg. when James says "super hot oven" in this episode I don't think I know enough to judge what this means.

normally super hot is as high as it can go (or just under), which is perfect for Yorkshires, artisanal pizza and charring veggies, like James did in the video. it would definitely be useful, I second your request!

Agree! I think a lot of this terminology comes back from back in the day without precise measurements, or simply days of gas ovens. I usually assume super hot to be 250 (i.e. as hot as the oven goes), hot around 200, medium anywhere between 150 and 180... Though would be nice to have more specifications. Now stove top instructions, that's a whole different story. Cooking on gas vs. cooking on electric is so different and not many recipes seem to acknowledge that. I have electric and I wish I had gas, many applications seem to favour it... but I suppose electric also has some advantages - it still stays hot after you turn it off and it loses heat gradually.

It's easier to give everyone roughly the same size/weight than to count the number of pieces plus it's easier to justify when asked about it... not that it matters to Karen though... *ptsd flashbacks*

You get one of those when you opt for some kit to go with the packs app. I got one! Happy to have it but I would prefer a thicker cloth over this, it just gets saturated with liquids very quickly.

When you're trying to decide between two purchases, and you really believe they're equal, go with the cheaper option. If you feel conflict with that choice, then they're not _really_ equal, are they? With the chefs, if they're tied, the lower cost should be the tiebreaker.

Give some inspiration for those who are low income or living off savings and really need to keep things tight since so many are struggling now who perhaps never have before or at least not to this extreme. I'm a big fan of watching people who have dedicated their lives to a certain skillset show it off. These videos are the best because we get to watch two really talented chefs show off their skills while the commentary helps point out little things the chefs do I would otherwise miss. The more you know, the less you need. That holds true for many things in life - including food. I liked both dishes. For cooking my midweek meal I'd probably be more on James's side - have a few very simple items that essentially cook themselves and one that brings it all together. Excellent episode again.

Meat has gotten crazy expensive because of COVID over here. So I started giving half a chicken breast per person, for example, and upping the vedge. And you know what? We’re so used to it that we all think we were eating crazy meat portions before. So yeah, sure, 6 chicken thighs for 4 people is totally great.

A few times a year I take my tea towels and napkins and soak them in a bleach solution, to get all the stains out. Tea towels saved! This was a really good battle, I love seeing the chefs at work.

Agreed on result, yeah, Ebbers killed it. It's rare for me to vote Ben on a chef v chef, I find James pushes boundaries more but Ben delivers on the simples. Classic shit sandwich there Matt (also a reference)

Next midweek meal: make dinner for Tyrone aka kid friendly dinners for busy parents. Usually that means not a ton of chopping, because kids like to be right in your way and we don't want to lose fingers. Can't be extremely hands on, because kids will pester you the whole time. Every kid is different, so kid friendly is up to your own interpretation. Like my kid will eat all the fruits and vegetables out there, but they have to be raw, not cooked.
